This is a fresh, tart start to any Blue Ribbon meal... year 'round!

Number Of Ingredients 9

1 pkg fresh cranberries, chopped
1 c sugar
2 large oranges
1 medium tart apple, shredded
1/2 c dates, chopped
16 oz. pkg cream cheese, room temperature
1 tsp vanilla extract
1 c heavy cream
1/3 c pecans , chopped

Steps:

  • 1. Fill muffin pans with 15-20 paper liners.
  • 2. Chop cranberries fine put in a medium bowl, add sugar and let set till ready to combine ingredients.
  • 3. chop one orange fine put in medium bowl, reserving juice.
  • 4. Shred apple add to chopped orange.
  • 5. Squeeze remaining orange. Add to reserved juice to make a total of 1/2 C. juice. Combine orange juice, cream cheese and vanilla, beat with a rotary beater till fluffy.
  • 6. Stir the orange, apple, cranberries and dates into cream cheese mixture .
  • 7. Whip cream till soft peaks form. Fold whipped cream into cream cheese mixture.
  • 8. Fill paper lined muffin pans with mixture, sprinkle lightly with pecans and freeze.

1 pound fresh or frozen cranberries
1 can (20 ounces) crushed pineapple, drained
1 cup sugar
2 cups miniature marshmallows
1 cup heavy whipping cream, whipped
1/2 cup chopped pecans

Steps:

  • In a food processor, cover and process cranberries until coarsely chopped. Transfer to a large bowl; stir in pineapple and sugar. Cover and refrigerate overnight. , Just before serving, fold in the marshmallows, whipped cream and pecans. If desired, top with additional chopped pecans.

1 cup sugar
¾ cup orange juice
2 tablespoons orange zest
½ cup sugar
¼ cup cream cheese, room temperature
2 cups heavy cream, cold
3 cups Kraft® Jet-Puffed Pals Miniature Marshmallows, divided
2 tablespoons orange zest

Steps:

  • Make the cranberry sauce: In a medium saucepan, combine the cranberries, sugar, orange juice, and orange zest, and bring to a simmer over medium heat. Cook for 13-15 minutes, or until the cranberries are soft and the sauce thickens. Remove the pot from the heat and let cool completely, then refrigerate for at least 1 hour, or until ready to use.
  • Make the marshmallow cups: Line 2 12-cup muffin tins with liners.
  • In a small bowl, cream together the sugar and cream cheese with an electric hand mixer on medium speed until smooth and fluffy.
  • In a large bowl, whip the heavy cream with an electric hand mixer on medium speed until stiff peaks form.
