A great supporting dish to chicken! I served the rice with chicken tikka, but it goes well with many chicken dishes, or whatever meat you find fit.

Tips:

- Instead of using medium heat, you can opt for medium-high to achieve faster cooking, especially if you’re cooking a large batch. - To save time, use frozen vegetables to make preparation easier. - Add peas and carrots toward the end of the cooking process as they require less time to cook. - Don't forget the eggs! They give fried rice a fluffy texture, extra flavor, and color. - Soy sauce adds a rich umami flavor to the rice. Adjust the amount to your taste preference. - Use day-old rice for the best results. Freshly cooked rice tends to be too moist for fried rice. If you're using fresh rice, spread it out on a plate or baking sheet to let it dry out for about 30 minutes before cooking. - Feel free to add other vegetables like chopped bell peppers, broccoli, or snap peas to the dish. - Use high-quality ingredients for the best flavor.

Conclusion:

Fried rice is a versatile dish that's easy to make and can be customized to your liking. It's a great way to use up leftover rice, vegetables, and protein. With its colorful and flavorful ingredients, fried rice with peas and carrots is sure to be a hit at your next family meal or gathering.
