Number Of Ingredients 10

8 ripe plum tomatoes, seeded and diced
2 tbsp finely minced garlic
1/2 cup coarsely chopped fresh basil
1/4 cup finely chopped fresh parsley
1 tbsp fresh lemon juice
1/2 tbsp extra-virgin olive oil
1 tsp finely minced fresh tarragon
1/4 tsp crushed red pepper flakes
2 baguettes, cut in 1/2-inch-thick slices
6 cloves garlic, cut in half

Steps:

  • In a bowl, mix all ingredients except bread and garlic cloves. Add salt and pepper to taste. Set aside, unrefrigerated, 3 hours. Heat oven to 350°F. Toast bread on a baking sheet. Rub cut side of garlic on each slice; top with tomato mixture.

Tips:

  • Use ripe, juicy tomatoes: The quality of your tomatoes will make a big difference in the flavor of your bruschetta. Choose tomatoes that are firm but ripe, with no bruises or blemishes. Roma tomatoes are a good choice for bruschetta because they are meaty and have a low water content.
  • Chop the tomatoes finely: This will help them release their juices and flavor. If you have a food processor, you can use it to quickly and easily chop the tomatoes.
  • Season the tomatoes generously: Don't be afraid to add a lot of flavor to your tomatoes. Use a combination of salt, pepper, garlic, basil, and olive oil. You can also add a splash of balsamic vinegar or red wine vinegar.
  • Let the tomatoes marinate: This will allow the flavors to meld and develop. You can marinate the tomatoes for as little as 30 minutes or for up to overnight.
  • Use a good quality bread: The bread is the other key ingredient in bruschetta. Choose a bread that is sturdy enough to hold up to the toppings, but not too thick or chewy. A good baguette or ciabatta bread are both good choices.
  • Toast the bread: This will help it to be crispy and flavorful. You can toast the bread in a toaster oven or on a grill.
  • Top the bread with the tomatoes: Once the bread is toasted, top it with the marinated tomatoes. You can also add other toppings, such as cheese, prosciutto, or arugula.

Conclusion:

Bruschetta is a delicious and easy-to-make appetizer that is perfect for any occasion. With just a few simple ingredients, you can create a dish that is both flavorful and visually appealing. So next time you're looking for a quick and easy snack or appetizer, give bruschetta a try.
