2 cups fully cooked ham, cubed
2 cups cooked, diced potatoes
1 cup frozen and defrosted or canned whole kernel corn, drained, or 2 ears of fresh
1/4 cup fresh, minced parsley or 1 tb. dried
1-2 tb. chopped onion
1/4 cup butter
1/3 cup flour
1 3/4 c. milk
1/8-1/4 tsp. pepper
1 c. shredded cheddar
1/8-1/4 tsp. salt, depending on the saltiness of your ham

Steps:

  • 1. In a large bowl, combine first 4 ingredients; set aside. Saute onion in butter for 2 minutes. Then, stir in flour until blended. Cook, stirring for 1 minute. Gradually whisk in milk, and pepper.
  • 2. Bring to a low simmer and stir for 2 minutes. I occasionally add 1/4 c. shredded cheddar at this point, too. Remove from heat, pour over the ham mixture and stir to combine. Taste test for salt. Add 1/8- 1/4 tsp. depending on the saltiness of your ham.
  • 3. Transfer to a greased 11x7x2 baking dish.
  • 4. Cover and bake at 350 degrees for 25 minutes. Uncover and sprinkle with cheese. Bake 5-10 minutes longer until cheese is melted.

2 cups cubed peeled potatoes
1 large carrot, sliced
2 celery ribs, chopped
3 cups water
2 cups cubed fully cooked ham
2 tablespoons chopped green pepper
2 teaspoons finely chopped onion
7 tablespoons butter, divided
3 tablespoons all-purpose flour
1-1/2 cups 2% milk
3/4 teaspoon salt
1/8 teaspoon pepper
1 cup shredded cheddar cheese
1/2 cup soft bread crumbs

Steps:

  • Preheat oven to 375°. In a saucepan, bring the potatoes, carrot, celery and water to a boil. Reduce heat; cover and cook until tender, about 15 minutes. Drain. , In a large skillet, saute ham, green pepper and onion in 3 tablespoons butter until tender. Add the potato mixture. Transfer to a greased 1-1/2-qt. baking dish. , In a large saucepan, melt the remaining butter; stir in flour until smooth. Gradually whisk in the milk, salt and pepper.
