Steps:
- 1. In a large bowl, combine first 4 ingredients; set aside. Saute onion in butter for 2 minutes. Then, stir in flour until blended. Cook, stirring for 1 minute. Gradually whisk in milk, and pepper.
- 2. Bring to a low simmer and stir for 2 minutes. I occasionally add 1/4 c. shredded cheddar at this point, too. Remove from heat, pour over the ham mixture and stir to combine. Taste test for salt. Add 1/8- 1/4 tsp. depending on the saltiness of your ham.
- 3. Transfer to a greased 11x7x2 baking dish.
- 4. Cover and bake at 350 degrees for 25 minutes. Uncover and sprinkle with cheese. Bake 5-10 minutes longer until cheese is melted.

Tips:
- Choose the right ham: Use a fully cooked ham for convenience and a smoky flavor. You can use a bone-in ham if you prefer, but it will take longer to cook.
- Cut the ham into small pieces: This will help it cook evenly and make it easier to eat.
- Use a variety of vegetables: This will add flavor and texture to the casserole. Some good options include potatoes, carrots, celery, onions, and peas.
- Don't overcook the casserole: The ham is already cooked, so you just need to heat it through. Overcooking will make the ham dry and tough.
- Serve the casserole hot: This is the best way to enjoy the flavors and textures of the dish.
Conclusion:
Ham casserole is a delicious and easy-to-make dish that is perfect for a family meal. With its simple ingredients and straightforward cooking instructions, it's a great option for busy weeknights or lazy weekends. So next time you're looking for a comforting and satisfying meal, give this ham casserole a try.
