FABULOUS OATMEAL COOKIES
I came up with this recipe for chewy, delicious, spiced oatmeal cookies. If you prefer a crisp cookie, bake them for about two minutes longer.

Steps:
- 1. In a medium bowl cream together butter, white sugar and brown sugar.
- 2. Beat in eggs, one at a time.
- 3. Add Vanilla.
- 4. Combine flour, baking soda, salt, and spices.
- 5. Mix in oats. If using electric mixer, stir in by hand.
- 6. Stir in chocolate chips. You can substitute raisins, or add them in with the chocolate chips.
- 7. Cover dough and chill for about an hour.
- 8. Preheat oven to 375ºF.
- 9. Grease cookie sheets.
- 10. Roll the dough into walnut sized balls and roll in sugar. Place balls of dough about two inches apart. If you want a crisper cookie, press the cookie a little bit flat.
- 11. Bake cookies for 8 to 10 minutes. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

- Preheat oven to 375°F/190°C/Gas Mark 5.
- Cream together; butter and sugars until light and fluffy.
- Add egg and vanilla extract; beat until well combined.
- In a small bowl combine oats, flour, soda, baking powder and salt.
- Mix into butter mixture until just combined.
- Stir in raisins if desired.
- Drop the dough by heaped tablespoons onto ungreased baking sheets, leaving a 2" gap between each mound.
- Tip: I used a dessert-spoon and made ovals rather than balls (quenelles, if we're being posh) as I heard that this caused the dough to spread less.
- Bake for 12-15 minutes until golden brown.
- Cool on sheet for at least a minute before transferring to a rack.
