½ cup vegetable oil, or as needed
1 egg
1 teaspoon water
10 crackers, or as needed, crushed
¼ cup cornmeal, or as needed

½ teaspoon garlic powder
salt and ground black pepper to taste
8 bone-in, skin-on chicken thighs

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Melt shortening and butter in a 9x13-inch baking dish in the preheating oven. Once melted, pour enough vegetable oil into the baking dish until oil is about 1/2-inch deep. Keep oil mixture in the oven while preparing remaining ingredients.
  • Beat egg and water in a shallow dish. Combine crackers, cornmeal, sage, tarragon, and garlic powder in a large resealable plastic bag. Season with salt and pepper; seal and shake bag to mix. Really this is such an easy recipe I wasn't going to even bother posting it, I have been making this for years and when you can't barbecue outside this is the next best thing! --- Sweet Baby Ray's BBQ sauce works really well or use your own favorite, I most always use my recipe#232433 and prepare the sauce a day ahead --- I did not list the amounts for the seasoned salt and garlic powder as I never measure but probably use about 2 teaspoons each for all the chicken pieces, I usually use about 2 cups sauce but a little more or less is fine -- boneless, skinless chicken breasts work well also but cooking time will need to be reduced, you will *love* this!

We loved it so much, that not only did we make it while camping last week, we also made it last night outside at home here. It's truly comfort food.

4 or 6 bone-in, skinless chicken thighs
1 c rice (we used brown rice)
1 pkg dry lipton onion soup mix
1 can(s) chicken broth
1 can(s) cream of mushroom soup
1 can(s) water

  • 1. Preheat your dutch oven for about 10 minutes. Then spray with cooking spray. Use a 10 inch dutch oven for this recipe. assemble your ingredients
  • 2. Pour the rice on the bottom of the dutch oven. Place the chicken over the rice, then sprinkle the onion soup mix over the chicken. Mix the mushroom soup mix, the broth and about 1 can of water together and mix. Pour this mixture over all. Cover the dutch oven and cook for at least an hour. You might need to cook it longer--the meat fell off the bone-so good!
  • 3. Place 14 coals on the top of the oven and 7 underneath the oven. You might need to have some extra hot coals ready just in case you need them. as you can see, we loved the dinner so much that we devoured the whole thing. (Not too good for a girl on WW, but I just couldn't help myself.)

Is this the very best barbequed chicken you ever tasted? Nope.... but it's pretty darn good! It's also about as easy as any scratch entree recipe you'll ever make. I prepared it a few nights back when I couldn't come up with anything for supper until late in the day -- that's when I remembered the frozen chicken (cut up) in my freezer. If the chicken is still half-frozen even after some defrosting in the microwave, this recipe still works fine.

1 chicken, cut up (skin on)
12 ounces barbecue sauce (1 bottle)
1 tablespoon seasoning salt
1/2 cup butter
1/2 cup water

Steps:

  • Pre-heat your oven to 350-degrees F.
  • Dump the cut up chicken parts (you can use all of one kind, such as thighs or drumsticks if you wish -- just use about three pounds or a little more, of chicken) into a large mixing bowl. Melt the butter in the microwave and pour it all over the chicken (if the chicken is really cold the butter will re-solidify and that's okay.).
  • Sprinkle the seasoning salt all over the chicken and blend the chicken parts around until they are evenly covered with the butter and seasoned salt. I don't bother to trim the chicken -- it really makes little difference whether you do or not. You can also add a little garlic powder and/or herbs if you like those flavors -- a little rosemary would be terrific.
  • Prepare a roasting pan (or large casserole dish) by placing a rack in the bottom (or anything else, such as an ovenproof plate) which will keep the chicken off the bottom. Add the water to the bottom of the roasting pan. Lay out the chicken on the rack. Cover the roaster with a lid or aluminum foil and bake for one hour at 350-degrees F.
  • At the end of the hour, uncover the chicken and brush on the barbeque sauce until the chicken parts are well-covered. Don't worry too much about the undersides. Re-set the oven to 250-degrees F. and bake the chicken for another full hour (add another 1/2 cup of water if the roasting pan is dry -- this steams the chicken and gets it really tender.) Serve with side dishes (I like steamed asparagus and microwave-baked potatoes.).
  • I like to serve the chicken with additional barbeque sauce at the table. My three favorite commercial sauces (in order of preference) are Kroger's hickory sauce (store brand), Sweet Baby Ray's sauce, and Open Pit (regular.).

Toppings such as Old El Paso sliced Jalapenos, sour cream, salsa, chopped cilantro, shredded lettuce, or any of your favorite taco toppings!

Steps:

  • Preheat oven to 400°F Spray a 9x13 baking dish with nonstick spray and set aside. Heat olive oil over medium heat in a medium skillet. Add onion to skillet and cook for 2-3 minutes, or until the onion is translucent and fragrant. Stir in the chicken, taco seasoning, tomatoes, and green chiles. Stir to combine fully. Reduce to simmer and allow to cook for 5-8 minutes. Place the taco shells in the baking dish, standing up. I was able to fit 10 taco shells in the dish by adding 2 on each side. Spoon 1 tablespoon of beans into the bottom of each taco shell. Top with the chicken mixture, almost to the top of each shell. Sprinkle each shell generously with shredded cheese, the more the better! Bake for 12-14 minutes or until cheese is fully melted and the edges of the shells are browned. Number Of Ingredients 24

1 1/4 lb chicken thighs, boneless, skinless
1 lb baby carrots, in pieces no bigger than 1 1/2 inches
1/2 lb crimini mushrooms, cut into quarters
1 can(s) 16 oz chickpeas, drained and rinsed
1 large onion, chopped into 1/1/2 " pieces
salt and pepper to taste
4 Tbsp olive oil
SPICE MIX
1 tsp coriander, ground
1 tsp turmeric
1 tsp cumin, ground
1 tsp each salt and pepper
1/2 tsp ginger, ground
1/2 tsp cinnamon
1/2 tsp red pepper, optional
TOPPING
1 c nonfat sour cream
1 Tbsp fresh lemon juice
1/2 c cucumber, diced
2 clove garlic, chopped finely
1/3 c yellow raisins
1/2 c castelvetrano olives, pitted and halved
cooked rice, your choice
cilantro, chopped

Steps:

  • 1. Heat oven temperature to 450 degrees F. Line cooking sheet with aluminum foil. Combine chickpeas, mushrooms, carrots, chicken, and onions on the cooking sheet. Sprinkle with 4 T olive oil, pepper, and salt, mix up..
  • 2. Combine the seasoning mix ingredients. Sprinkle on the chicken and vegetable mix on the cooking sheet. Bake for 15 minutes. Take cooking sheet out of the oven, and turn on the broiler. Add the raisins and olives to the chicken mixture.
  • 3. Put cooking sheet in oven and broil for 15 minutes or until chicken is just cooked through, not overdone.
  • 4. While cooking sheet is on broil, mix up the topping ingredients including sour cream, lemon juice, cucumber, and garlic cloves.
  • 5. Serve the chicken and vegetables mixture over your choice of rice and put topping over all. Add Cilantro and lemon slices, as desired.

1/2 cup barbecue sauce
2 tablespoons hoisin sauce
1 tablespoon dark sesame oil
12 chicken drumsticks (without thighs)
1 lime
1 teaspoon red chili pepper flakes (optional)
grated orange zest or lime zest (optional)
1 teaspoon minced ginger (optional)

Steps:

  • Preheat oven to 375F or fire up grill.
  • Line a rimmed baking sheet with foil.
  • In a large bowl, stir barbecue sauce with hoisin and sesame oil.
  • Stir in chili flakes, minced ginger and/or orange/lime zest (I added chili flakes and ginger) Add chicken drumsticks, then stir to coat.
  • Spread chicken out on foil.
  • Spoon sauce left in bowl over chicken.
  • Roast in centre of preheated oven until richly glazed, about 40 to 45 minutes.
  • Slice lime in half and squeeze juice overtop.
  • Spoon gooey sauce left on baking sheet over chicken.
  • Great with Lee Hong's Cucumbers (90816).

Tips:
