EASY LEMON SHORTIES

Time 57m

Yield 36 cookies

Number Of Ingredients 4

1 cup butter (no substitutes)
1/2 cup granulated sugar or 1/2 cup packed brown sugar
2 tablespoons lemon rind, grated
2 cups all-purpose flour (or 1 cup all-purpose and 1 cup whole wheat or graham flour)

Steps:

  • Using a large bowl, cream butter and beat in sugar until light and fluffy.
  • Stir in lemon rind.
  • Gradually stir in flour until blended.
  • Shape dough into 2 equal discs, wrap in plastic wrap and refrigerate for about 30 minutes until chilled.
  • Preheat oven to 300F.
  • Between 2 sheets of waxed paper, roll out dough to 1/4 inch thickness.
  • Using a 2 inch floured cutter, cut out cookies and place on an ungreased baking sheet.
  • Bake in 300F oven for 17 to 30 minutes until lightly browned on bottom.
  • Remove from oven and allow cookies to cool on racks.

Tips:

  • Soften butter: Make sure the butter is softened at room temperature, not melted. Melted butter is too soft and won't provide the stability necessary for the bars to hold their shape.
  • Use lemon zest: Freshly grated lemon zest adds a bright, citrusy flavor to the bars. If you don't have lemon zest, you can use 1 teaspoon of lemon extract instead.
  • Cream butter and sugar until light and fluffy: This step helps to incorporate air into the mixture, making the bars light and tender.
  • Mix in eggs one at a time: This prevents the eggs from curdling and ensures that they are evenly distributed in the batter.
  • Use fresh lemon juice: Bottled lemon juice can be used in a pinch, but fresh lemon juice will give the bars a more intense flavor.
  • Do not overbake: The bars are done baking when they are just set in the center. Overbaking will dry them out.
  • Cool completely: The bars need to cool completely before you cut them into bars. This helps them to set and prevents them from falling apart.

Conclusion:

These easy lemon shorties are a delicious and refreshing treat perfect for any occasion. They're made with simple ingredients and are easy to make, even for beginners. Follow these tips to ensure your lemon shorties turn out perfect every time.
