1 (10 ounce) can enchilada sauce
10 fluid ounces milk
1 (13 ounce) package flavored tortilla snack chips (such as Doritos®), crushed
8 slices processed cheese food (such as Velveeta®)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir ground beef in a large pot over medium-high heat until the beef is crumbly and completely browned, 7 to 10 minutes. Drain and discard excess grease.
  • Stir cream of chicken soup, enchilada sauce, and milk with the ground beef; bring to a simmer and cook for 5 minutes.
  • Spread crushed tortilla snack chips into a 9x13-inch baking dish. Pour ground beef mixture over crushed chips; stir. Arrange cheese slices atop the mixture.

1 pound ground beef (90% lean)
1 can (10 ounces) enchilada sauce
1 cup salsa
6 flour tortillas (10 inch)
2 cups fresh or frozen corn
4 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350°. In a large skillet, cook ground beef over medium heat until no longer pink, breaking it into crumbles; drain. Stir in enchilada sauce and salsa; set aside. , Place 2 tortillas, overlapping as necessary, in the bottom of a greased 13x9-in. baking dish. Cover with a third of the meat mixture. Top with 1 cup corn; sprinkle with 1-1/3 cups cheese. 4 cooked skinless, boneless chicken breast halves, chopped
8 ounces sour cream
½ cup chopped green onions
3 cups salsa
1 (4 ounce) can diced green chiles
4 cups shredded Monterey Jack cheese
12 (8 inch) flour tortillas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • In a medium bowl combine the soup, chicken, sour cream and green onions. Mix together. In another small bowl combine the salsa and green chile peppers and mix.

1 (13 ounce) package taco flavor Doritos (save 2 cups for casserole topping)
2 tablespoons onions, grated
1 (10 ounce) can chili with beans
1 (15 ounce) can enchilada sauce
1 (8 ounce) can tomato sauce
1 1/2 cups shredded sharp cheddar cheese
2 cups Doritos
1/2 cup shredded cheddar cheese
8 ounces sour cream (less if you want, or low-fat)

Steps:

  • Preheat oven 375 degrees.
  • Crumble 6 cups of Doritos with your hands into a large mixing bowl.
  • Add onion, chili, enchilada sauce, tomato sauce and 1 -1/2 cups cheddar cheese to the crumbled Doritos. Stir with a rubber spatula to combine.

2 tbsp. dried onion
1 12 oz bag Nacho Cheese Doritos
2 cups shredded cheese
Sour cream

  • Spray and 8 x 8 casserole dish. Mix the chili, enchiladas sauce, tomato sauce, onion, 6 cups of crushed Doritos and 1 ½ cups shredded cheese. Do this right in the casserole dish or you can mix it in a separate bowl.
