Time 4h25m

Number Of Ingredients 11

2 1/2 lb potatoes, peeled and cubed . 1/2 inch
2 carrots. sliced thin - i use my mandolin
2 medium onion, diced
2 celery stalks, sliced thin
1 1/2 tsp basil
1 1/4 tsp salt
1/2 tsp pepper
30 oz chicken broth
1/3 c flour
1 1/2 c half n half
3/4 package real bacon bits or crumbled crisp bacon - could also add cubed, cooked ham

Steps:

  • 1. Combine the first 8 ingredients in a 4 - 5 quart crock pot. Stir and cook on high for 3 - 3 1/2 hours or until vegetables are tender.
  • 2. In a container with a lid, shake together the half and half and flour. Stir this mixture and bacon into the soup and cook another 30 - 45 minutes. Taste and adjust seasonings according to taste.
  • 3. Serve with favorite condiments, such as sliced green onions and sour cream.

Tips:

  • Choose the right potatoes: Russet potatoes are the best choice for this soup because they hold their shape well and don't get mushy. Yukon Gold and red potatoes can also be used, but they may need to be cooked for a shorter amount of time.
  • Use chicken broth instead of water: Chicken broth adds a lot of flavor to the soup. If you don't have chicken broth on hand, you can use vegetable broth or water, but the soup will be less flavorful.
  • Don't overcook the potatoes: The potatoes should be cooked until they are tender, but not mushy. If you overcook them, they will fall apart and the soup will be too thick.
  • Add the cheese at the end: Stirring in the cheese at the end of the cooking time will prevent it from curdling.
  • Garnish the soup with your favorite toppings: Some popular toppings for potato soup include bacon, chives, sour cream, and oyster crackers.

Conclusion:

This easy crock pot potato soup is a delicious and hearty meal that is perfect for a cold winter day. It is also a great way to use up leftover potatoes. With just a few simple ingredients and a little time, you can have a delicious and comforting soup that the whole family will enjoy.
