1/3 cup water
2 tablespoons dried minced onion

1/8 teaspoon garlic powder
3/4 cup milk
3/4 cup sour cream
1/2 cup shredded cheddar cheese
Coarsely ground pepper, optional

Steps:

  • Place the potatoes, water, onion and bouillon in an ungreased microwave-safe 2-1/2-qt. dish. Cover and microwave on high for 12-14 minutes until potatoes are tender and bouillon is dissolved, stirring once., In a small bowl, combine the flour, salt and garlic powder; stir in milk until smooth. Pour over potatoes. Microwave, uncovered, on high for 4 minutes or until thickened, stirring twice. Stir in sour cream; sprinkle with cheese. Cook 3 minutes longer or until cheese is melted. Sprinkle with pepper if desired.

2 large baking potatoes (about 1-1/2 lb.)
4 cups small broccoli florets
1 Tbsp. water
1/4 cup BREAKSTONE'S FREE or KNUDSEN Fat Free Sour Cream
1/4 tsp. pepper
4 KRAFT 2% Milk Singles

Steps:

  • Prick potatoes in several places with tip of sharp knife. Place on microwaveable plate. Microwave on HIGH 10 to 12 min. or until tender, turning potatoes over after 6 min. Remove from microwave; set aside.
  • Place broccoli and water in medium microwaveable bowl; cover loosely. Microwave on HIGH 3 to 4 min. or until crisp-tender; drain. Cut each potato lengthwise in half; scoop out potatoes, leaving 1/4-inch shell. Add potato pulp to broccoli along with the sour cream and pepper; mix well. Stuff broccoli mixture into potato shells. Top each with 2% Milk Singles. Place stuffed potatoes on microwaveable plate.
  • Microwave on HIGH 2 min. or until Singles are melted and potatoes are hot.

5 or 6 medium red or gold potatoes, washed and cubed, peel if desired
1 medium onion, sliced
1 pkg ranch dressing mix
3 Tbsp canola oil
2 Tbsp butter
1 large plastic steamer bag
1 1/2 c cheddar/jack cheese, shredded
1 - 2 Tbsp dried parsley flakes
salt and pepper to taste
OPTIONAL TOPPINGS:
butter
real bacon pieces
sour cream
chopped green onion

Steps:

  • 1. Put oil into steamer bag. Add salt, pepper, parsley and seasonings. Close bag and mash bottom of bag to dissolve and distribute seasonings into oil, add a bit more oil if you need to.
  • 2. Add potatoes, onion and about a tablespoon of butter. Seal bag and cook on high in microwave for 7 minutes. If you are using a regular ziploc bag, just close the bag half-way to allow for steam to release.
  • 3. Carefully shake bag, cook 7 more minutes. Shake again and continue to cook for 5 more minutes.
  • 4. Open bag (careful, it's steamy) and pour potatoes into serving bowl, add cheeses and butter, carefully - so as not to mash potatoes - mix to melt cheeses and butter into potatoes.
  • 5. Top with bacon pieces, sour cream or your choice of toppings.

1 to 1-1/2 teaspoons salt
1/4 teaspoon pepper

1/4 cup chopped onion

Steps:

  • In a saucepan, melt the butter. Stir in flour, salt and pepper until smooth. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Stir in cheese until melted. In a 2-1/2-qt. microwave-safe dish coated with cooking spray, layer a third of the potatoes, onion and cheese sauce. Repeat the layers twice. Cover and microwave on high for 25-30 minutes, stirring every 5 minutes until the potatoes are tender.

  • Scrub potatoes thoroughly.

2 tablespoons margarine or 2 tablespoons bacon drippings
2 cups chopped onions
1/2 cup hot water
12 medium potatoes, cut into 1/2 inch cubes
salt and pepper, to taste
4 slices crumbed bacon
1/4 cup milk or 1/4 cup cream
2 cups grated cheddar cheese (old preferred)

Steps:

  • In a 1-1/2 quart casserole, combine butter or marg, hot water and chopped onion.
  • Microwave on high for 2-3 minutes.
  • Stir in potatoes, salt and pepper.
  • Microwave covered in 5 minute intervals stirring between each until cooked (25- 30 minutes).
  • When tender, stir in milk/cream, bacon and cheese until smooth.
