2 large eggs
1/2 c cheddar cheese, shredded
1/2 c panko bread crumbs
1/2 tsp cayenne pepper
salt
olive oil

Steps:

  • 1. Cut cauliflower into florets and cook in boiling water until tender about 10 minutes. Drain. Mash the cauliflower while still warm. Stir cheese, eggs, panco, cayenne and salt to taste.
  • 2. Coat the bottom of a griddle or skillet with olive oil over medium high heat. Form the cauliflower mixture into patties about 3 inches across.
  • 3. Cook until golden brown and set about 3 minutes per side. Keep each batch warm in the oven while you cook the rest.

1 1/2 cups mayonnaise
1/4 cup prepared mustard
1 1/2 teaspoons seasoning (Morton Nature's Seasons seasoning blend)
2 cups shredded cheddar cheese
1/4 cup water (approximate)
seasoned bread crumbs (optional)

Steps:

  • Place cauliflower in a deep microwave safe dish that has a lid or can be covered with plastic wrap.
