The original recipe is an recipe from 'Pillsbury'...I have made it a "Diabetic-Friendly" recipe by making a few changes to the ingredients...however, I don't have the exact calorie or carb. counts. I think it is just as tasty as the original recipe. But there are less calories/serving and less carbs.

SUGAR-FREE CRUST:
1 box 'pillsbury' yellow, sugar-free cake mix
1/3 c canola oil
2 large eggs
STRAWBERRY CREAM CHEESE FILLING:
2 pkg (8 oz. each) low-fat or fat-free cream cheese, softened
1/4 c splenda, granulated
1/2 c strawberry dessert topping from 11.75 oz. jar or 1/2 cup sugar-free strawberry jam
2 large eggs
STRAWBERRY TOPPING:
2 pkg (8 oz. each) sugar-free or fat-free frozen whipped topping, thawed
4 to 6 red food coloring drops, if desired
18 fresh strawberries, if desired
1/4 c strawberry dessert topping or strawberry sugar-free jam

Steps:

  • 1. PREHEAT: Oven to 350°F. COOKIE CRUST: COMBINE: Cake mix, oil, and eggs together in a large mixing bowl. STIR: With spoon until throughly moistened and well combined. SHAPE: Cookie dough into large ball. PRESS: Cookie dough evenly into bottom only of ungreased 9x13-inch pan. (If dough is sticky, use floured fingers.) FILLING: IN: Medium mixing bowl, beat cream cheese, splenda and 1/2 cup of the strawberry topping OR sugar-free jam with electric mixer on medium-high speed about 1 minute or until well blended. ADD: Eggs; beat about 2 minutes or until well blended and creamy. SPREAD: Evenly over crust in pan. BAKE: 30 to 35 minutes or until center is set. COOL: 1 hour. Center will sink slightly as it cools. TOPPING: IN: Medium mixing bowl, mix whipped topping, food color and 1/4 cup strawberry topping OR sugar-free jam. SPREAD: Topping mixture over cooled cream cheese layer. REFRIGERATE: About 2 hours or until set. TO: Serve, cut into 6 rows by 3 rows. GARNISH: Each serving with fresh berries. SERVE & ENJOY! ***Cover and refrigerate any remaining dessert.

16 1/2 oz refrigerated sugar cookies, room temperature
2 pkg 8 oz. each, cream cheese, softened
1/4 c granulated sugar
1 c strawberry ice cream topping
2 medium eggs
16 oz thawed whipped topping (i use lite,cool whip)
5 fl red food coloring drops
fresh berries for garnish

Steps:

  • 1. Heat oven to 350^. Press cookie dough evenly into bottom only of an ungreased 13x9-inch pan.(If dough is sticky, use floured fingers or bottom of a glass). In medium bowl, beat cream cheese, sugar and 3/4 cup of the strawberry topping with electric mixer on medium-high speed about 1 minute or until well blended. Add eggs; beat about 2minutess or until well blended and creamy. Spread evenly over crust in pan. Bake 30-35 minutes or until center is set. Cool 1 hour. Center will sink slightly as it cools -so don't think you did something wrong.lol In a medium bowl, mix whipped topping, food color and remaining 1/4 cup strawberry topping. Spread mixture over cooled cream cheese layer. Refrigerate about 2 hours or until set. --- To serve, cut into 6 rows by 3 rows. Garnish each serving with fresh berries. Cover and chill any remaining dessert. LOL. --- Note: I have use other ice cream toppings and some pancake syrups with pretty good results too- like blueberry,raspberry, etc. and fresh fruit.

3 tablespoons butter, melted
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 (8 ounce) package cream cheese, softened
1 ½ cups milk
1 (1 ounce) package cheesecake flavor sugar-free instant pudding mix
2 pints fresh strawberries, sliced

Steps:

  • Mix together graham cracker crumbs, melted butter, cinnamon, and nutmeg in a bowl.
  • Press the mixture into an 8-inch pie dish. Refrigerate while making filling.
  • Beat cream cheese in a mixing bowl with an electric mixer on medium speed until softened. reduce the speed to low, and gradually beat in milk, a little at a time (mixture will be watery). Use a rubber spatula to scrape cream cheese from the sides of the bowl, if necessary.
  • Beat in pudding mix until the filling is thick and smooth.
  • Spoon half of the cream cheese filling into the bottom of the graham cracker crust.
  • Spread half the strawberries over the filling.

1 (17.5 ounce) pouch sugar cookie mix
½ cup butter, softened
1 egg
1 (8 ounce) package cream cheese, softened
1 (8 ounce) container frozen whipped topping
⅓ cup white sugar
2 tablespoons cornstarch
4 cups sliced fresh strawberries, divided
⅓ cup water
1 teaspoon vanilla extract
1 dash red food coloring, or desired amount

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray the inside bottom of a jelly roll pan with cooking spray.
  • Mix sugar cookie mix, butter, and egg together in a large bowl until a soft dough forms; press evenly into prepared pan.

1/2 cup sugar
2 tablespoons cornstarch
1/3 cup water
10 to 12 drops red food color, if desired

Steps:

  • Heat oven to 350°F. Spray bottom only of 15x10x1- or 13x9-inch pan with cooking spray. In large bowl, stir cookie mix, butter and egg until soft dough forms. Press evenly in bottom of pan. Bake 15 to 20 minutes or until light golden brown. Cool completely, about 30 minutes.
  • In small microwavable bowl, microwave baking chips uncovered on High 45 to 60 seconds or until chips are melted and can be stirred smooth. A cool simple jello dessert. My Aunt Barb passed this recipe on to me when I was little. It contains my favorite combination: strawberries and sour cream. Cooking time is chill time.

2 (3 ounce) packages strawberry Jell-O gelatin dessert (I use wild strawberry)
2 cups boiling water
2 (10 ounce) packages frozen strawberries (best if thawed slightly)
1 (13 1/2 ounce) can crushed pineapple
2 large bananas, sliced
1 cup sour cream

Steps:

  • In large bowl dissolve jello in boiling water.
  • Add frozen berries and stir until thawed.
  • Stir in remaining fruit.
  • Pour 1/2 of the mixture in 9x13 pan and chill.
  • When firm, spread sour cream on first layer and then pour remaining jello-fruit mix on top and chill until firm.
  • Note: To save time you could just put the sour cream on top.
