DELICIOUS THAI SWEET CHILI SAUCE
Sweet and a little spicy. Our basic condiment in the house. Very quick and simple to make. Based on the Lemon Grass Restaurant's cookbook "The Best of Vietnamese & Thai Cooking". We always have a jar on hand in the frig. Many different ground chili paste nomenclatures. If unsure, read the ingredients: red chili peppers, salt, vinegar, and sesame oil are basic to all of them. Usually in a clear plastic jar with a green or red plastic lid.

THAI SWEET CHILI SAUCE
Similiar to Mae Ploy. Additions may be added...ginger, cilantro, etc. Use for dipping chicken fingers, spring rolls, wantons, Crab Ragoon, grilled chicken, fried calamari...and the list goes on. (Note: Traditionally, Thai Sweet Chili sauce is not thickened with starch, but rather cooked into a syrupy consistancy. There's some benefit to thickening with starch and using less sugar.)

Steps:
- Keeping the seeds makes for a hotter end product, removing less so. Keep in mind it will be hotter the first day and dissipates over time. Resist the urge to taste and redip your spoon. Enzymes in saliva breaks down starches and will eventually make it watery -- that is in my humble opinion.
- In a food processor blend together the garlic, red peppers, sugar, water, vinegar and salt into a puree; transfer to a sauce pan.
- Bring mixture to a boil and simmer until the mixture begins to thicken and garlic and peppers bits slightly soften, about 3 minutes.
- Combine cornstarch and water to make a slurry. Whisk into the sugar/pepper mixture. Bring to a boil and cook for 1 minute. Cool completely before storing in refrigerator.
Tips for Making the Best Thai Sweet Chili Sauce:
- Use fresh, ripe red chilies for the best flavor. If you can't find red chilies, you can use a combination of red and green chilies.
- Use a food processor or blender to mince the chilies, garlic, and ginger. This will help to create a smooth sauce.
- Don't be afraid to adjust the amount of chili peppers and garlic to your own taste. If you like it spicier, add more chili peppers. If you like it milder, add less.
- Use a good quality fish sauce. The fish sauce is what gives the sauce its umami flavor. Make sure to use a brand that you trust.
- Simmer the sauce for at least 15 minutes. This will help to develop the flavors and thicken the sauce.
- Store the sauce in a jar or bottle in the refrigerator for up to 2 weeks.
Conclusion:
Thai sweet chili sauce is a versatile sauce that can be used on a variety of dishes. It's perfect for dipping spring rolls, egg rolls, and chicken satay. It can also be used as a marinade for chicken or fish, or as a stir-fry sauce. No matter how you use it, Thai sweet chili sauce is sure to add a delicious flavor to your meal.
