1 tablespoon olive oil
½ teaspoon Sea Salt, gray
1 pinch ground cumin
1 pinch ground cinnamon

  • Roast in the preheated oven until crispy and golden brown, 13 to 15 minutes; watch closely as thinner chips can burn quickly.

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 6

1 medium butternut squash
Vegetable oil, for deep-frying
2 sprigs rosemary
2 sprigs sage
Kosher salt
1/4 cup grated Parmigiano-Reggiano

Steps:

  • Remove the top cylinder portion of the butternut squash and peel with a vegetable peeler. Discard or use the bulb portion for something else. Using a mandoline, finely slice round chips from the peeled cylinder and hold in ice water for 30 minutes to chill. Preheat 2 to 3 inches of oil in a heavy-based pot to 320 degrees F add the fresh herbs and fry until they stop sizzling. Remove from oil and drain on paper towels. Dry chips between paper towels then fry in small batches for 2 to 3 minutes until golden and crispy. Season with salt and shower with fresh grated Parmesan and crumbled herbs.

Tips:

  • For the best results, choose firm, ripe squash that is free of blemishes.
  • Make sure to slice the squash evenly so that it cooks evenly.
  • Toss the squash with oil, salt, and pepper before baking to help it crisp up.
  • Bake the squash in a single layer so that it doesn't steam.
  • Keep an eye on the squash while it is baking and remove it from the oven when it is golden brown and crispy.
  • Serve the squash chips immediately with your favorite dipping sauce.

Conclusion:

Crispy squash chips are a delicious and healthy snack that can be enjoyed by people of all ages. They are easy to make and can be customized to your own taste preferences. Whether you like them plain or seasoned, crispy squash chips are a great way to enjoy this nutritious vegetable.
