BAKED CHICKEN WINGS - EXTRA CRISPY, LIKE DEEP-FRIED

Baked Chicken Wings - Extra Crispy, Like Deep-Fried image

A recipe for the best baked chicken wings that are extra crispy on the outside and very tender and most on the inside.

Provided by Victor

Categories     Dinner     lunch

Time 35m

Number Of Ingredients 5

2 lbs chicken wings ((tips removed, separated into wingettes and drumettes))
1 Tbsp BAKING POWDER ((whatever you do, do NOT use baking soda))
1 tsp kosher salt ((plus more to taste))
1 Tbsp butter ((melted))
1/3 cup hot wing sauce ((e.g. Duff's hot sauce))

Steps:

  • Preheat oven to 450F.
  • Dry chicken with a paper towel really well. Place the wings in a large bowl. Sprinkle baking powder over the wings. Toss until all wings are evenly covered in baking powder. Better yet, mix by hand to ensure even coverage.
  • Line a large baking sheet with aluminum foil. Place a cooling rack (see note) on top and spray with Pam or rub with cooking oil to prevent sticking.
  • Lay the chicken wings on the rack, leaving space between the wings.
  • Place the baking sheet in the oven. Turn the heat down to 425F and set the mode to convection.
  • Bake for 30-40 minutes, until the wings are nicely browned and crisp.
  • Let the wings rest for 5 minutes. This will preserve crispiness of the skin.
  • Meanwhile, prepare the Buffalo wing sauce by combining the butter and the hot wing sauce in a small bowl.
  • Season the wings with salt and whatever other seasonings you like. Toss with the Buffalo sauce or serve with the sauce on the side.

  • Line a baking sheet with aluminum foil and place a wire rack (I use a cooling rack) on top. Spray the rack with non-stick spray.

Categories     Poultry Appetizers

Number Of Ingredients 16

12 - chicken wings
2 - cinnamon sticks
3 - star anise
2 tablespoon(s) peppercorns, whole black
- FIVE SPICE POWDER INGREDIENTS
- vegetable oil
1/2 teaspoon(s) baking soda
1/4 cup(s) cornstarch
1/2 cup(s) all purpose flour
1/4 cup(s) water
1/2 teaspoon(s) five spice powder
1/2 teaspoon(s) salt
1 teaspoon(s) sugar
2 teaspoon(s) soy sauce
2 teaspoon(s) vegetable oil
6 - cloves

Steps:

  • Separate chicken wings at joints; discard tips.
  • Mix egg, 2 teaspoons oil, soy sauce, sugar, salt and five-spice powder; pour over chicken.
  • Cover and refrigerate 1 hour.
  • Add water to chicken; stir flour, cornstarch and baking soda into chicken.
  • Heat oil (1 l/2 inches) in dutch oven or wok to 350.
  • Fry 4 or 5 chicken pieces at a time about 4 minutes, turning 2 or 3 times, until light brown; drain on paper towel.
  • Increase oil temperature to 375.
  • Fry half of the chicken pieces about 1 minute or until golden brown; drain on paper towel.
  • Repeat with remaining chicken.
  • Serve with sweet-and-sour sauce or hot mustard if desired.
  • FIVE SPICE POWDER In a small, heavy dry skillet, toast peppercorns over medium heat until they become fragrant, about 1 to 2 minutes. Shake pan often to prevent burning. Remove to a bowl.
  • Repeat toasting process separately with star anise, fennel seeds, cinnamon, and cloves.
  • Pour all of the toasted spices into a spice grinder (or clean coffee grinder) and grind to a fine powder.
  • Let rest in the grinder for 1 minute, then transfer to a glass container and tighten lid. Store in a cool, dark place up to one month.
  • Use five-spice powder sparingly, as it can be quite pungent.

Tips:

  • To achieve the crispiest wings, ensure your wings are thoroughly dried before cooking. Pat them dry with paper towels or use a salad spinner to remove excess moisture.
  • For a more flavorful coating, marinate your wings in a mixture of your favorite spices, herbs, and seasonings for at least 30 minutes before cooking.
  • To get a golden brown color, toss the wings in a mixture of flour, cornstarch, and baking powder before baking or frying.
  • For extra crispy wings, double-fry them. Fry them once at a lower temperature (around 325°F) for about 10 minutes, then increase the temperature to 375°F and fry for an additional 5-7 minutes.
  • For a healthier alternative, bake your wings instead of frying them. Bake them at 400°F for about 45 minutes, flipping them halfway through the cooking time.
  • Serve your wings with your favorite dipping sauce, such as ranch dressing, blue cheese dressing, or barbecue sauce.

Conclusion:

Crispy chicken wings are a delicious and versatile appetizer that can be enjoyed by people of all ages. Whether you prefer them baked or fried, mild or spicy, there is a chicken wing recipe out there to suit your taste. So next time you are looking for a crowd-pleasing snack, give one of these crispy chicken wing recipes a try.
