Dough for single-crust pie
1 package (8 ounces) reduced-fat cream cheese
1/2 cup egg substitute
3 tablespoons honey
1 teaspoon vanilla extract
3-1/2 cups sliced fresh strawberries
1 tablespoon cornstarch
1/2 cup cold water
1/2 cup reduced-sugar strawberry preserves
Fat-free whipped topping, optional

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. , Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. Reduce oven setting to 350°., Meanwhile, in a large bowl, beat cream cheese, egg substitute, honey and vanilla until smooth. Pour into crust. Bake until center is almost set, 15-18 minutes longer. Cool completely on a wire rack., Arrange strawberries over filling. In a saucepan, combine cornstarch and water until smooth. Stir in preserves. Bring to a boil; cook and stir for 2 minutes or until thickened. Spoon or brush over the strawberries. Refrigerate for 2 hours before cutting. If desired, garnish with whipped topping.

8 ounces cream cheese, softened
1/2 cup sugar
1 quart fresh strawberries, washed and cored
3/4 cup sugar
1 1/2 cups water
1 (4 ounce) package strawberry Jell-O gelatin dessert
2 tablespoons cornstarch
1 keebler shortbread pie crust

Steps:

  • In a small mixing bowl beat cream cheese and sugar until fluffy. Cover and put in refrigerator. Place several whole strawberries on the bottom of the pie shell and then fill in with sliced strawberries. Set aside. Bring water, sugar, cornstarch to boil over medium-low heat until thick and clear, about 2 minutes. Remove from heat and add Jell-O. Stir until dissolved and pour while hot over berries in pie shell. Let cool, then refrigerate for several hours or overnight. When pie is cooled, spoon the cream cheese topping on top of the pie and smooth over. Or, if you like you can pipe the cheese on with a frosting bag and tip. (a Ziploc bag with the corner snipped off works well too.) Refrigerate until ready to eat. Enjoy!

GRAHAM CRACKER CRUST
1 1/2 c graham cracker crumbs
1/4 c sugar
6 Tbsp butter melted
PIE FILLING
1 box (8 ounces) cream cheese
3/4 tsp vanilla extract
1/2 c powdered sugar
1 c whipping cream
STRAWBERRY TOPPING
2 Tbsp cornstarch
1/4 c sugar
2 Tbsp strawberry gelatin
1/2 c water
1 Tbsp lemon juice
3 c strawberries hulled

Steps:

  • 1. Stir together graham cracker crumbs, 1/4 cup sugar and melted butter. Firmly press crumb mixture into bottom and up sides of a 9-inch pie dish. Bake at 350 degrees for 8-9 minutes. Remove from oven and cool for 30 minutes.
  • 2. Using mixer beat cream cheese until smooth. Add vanilla extract and powdered sugar; continue mixing until smooth. In separate bowl whip cream until soft peaks form. Fold whipped cream into cream cheese mixture and carefully spread in baked crust. Chill for 1-2 hours.
  • 3. In small saucepan whisk together cornstarch, 1/4 cup sugar, strawberry gelatin, water and lemon juice. Cook over low heat whisking constantly until thickened. Remove from heat and allow to cool for 10-15 minutes. Add strawberries to the pan and stir to coat. Layer glazed strawberries over the pie. Refrigerate until ready to serve.

This recipe was one I was searching for to take to a gathering. I had this pie at a restaurant many years ago and this is as close as I could come to that one.

1 quart strawberry
3 ounces cream cheese
1 1/4 cups sugar
3 tablespoons cornstarch
1 tablespoon lemon juice
1/2 cup heavy whipping cream
1 tablespoon confectioners' sugar

Steps:

  • You will need one 9 -inch baked pie shell.
  • Wash, drain and hull strawberries. Beat cream cheese with a fork. Spread cream cheese over the bottom of the baked pie shell, I found if the shell was a little warm it spread nicely. Divide strawberries and put 1/2 onto cream cheese covered pie shell. The recipe called for placing strawberries whole but I quartered mine. Mash remaining strawberries and measure to make 1 1/2 cups if not add water to make that amount. In saucepan mix granulated sugar, with cornstarch gradually add mashed strawberries and lemon juice cook medium heat until thickened -5 to 7 minutes. Remove heat and cool. When cool pour over strawberries in pie shell . Whip cream with confectioners sugar until holds shape and spoon over cooled pie.
  • I made this pie for my husband with Splenda and got the same results so this would make a good sugar-free dessert.
