1 boneless beef chuck roast (3 to 4 pounds)
2 teaspoons salt
1 teaspoon pepper
2 tablespoons canola oil
2 medium carrots, finely chopped
1 medium onion, chopped
2 garlic cloves, minced
1 cup cranberry juice
3/4 cup water
1/2 cup fresh or frozen cranberries
1/2 cup balsamic vinegar
2 fresh thyme sprigs
1 bay leaf
3 tablespoons cornstarch
3 tablespoons cold water

Steps:

  • Sprinkle beef with salt and pepper. In a large skillet, heat oil over medium heat. Brown roast on all sides. Transfer to a 5-qt. slow cooker., Add carrots and onion to drippings; cook and stir over medium heat 4-5 minutes or until tender. Add garlic; cook 1 minute longer. Spoon vegetables around roast; add cranberry juice, 3/4 cup water, cranberries, vinegar, thyme and bay leaf. Cook, covered, on low 7-9 hours or until meat is tender., Using a slotted spoon, remove roast and vegetables to a serving platter; keep warm. Pour cooking juices into a small saucepan; skim fat. Discard thyme and bay leaf. Bring cooking juices to a boil. Mix cornstarch and water until smooth; gradually stir into pan. I have been making jerky for years. This is my recipe concocted by trial and error. Everyone who has tried it says it is the 'best jerky' they have ever had! My dehydrator is designed for jerky. It takes me about 4 hours to dry the meat. This could also be done in the oven or using other dehydrators. Please check your manual for correct times as each machine is different. I hope you enjoy this jerky as much as me and my family do.

2 pounds beef round steak, cut into thin strips
¼ cup soy sauce
2 tablespoons Worcestershire sauce
2 tablespoons liquid smoke
2 tablespoons brown sugar
2 teaspoons salt
1 teaspoon ground black pepper
1 teaspoon meat tenderizer
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika

Steps:

  • Place beef strips in the bottom of a large bowl. Pour soy sauce, Worcestershire sauce, liquid smoke, brown sugar, salt, pepper, meat tenderizer, garlic powder, onion powder, and paprika over beef. Mix to assure all the meat is evenly coated. Cover and marinate in the refrigerator for 8 hours or overnight.
  • Remove meat from bowl and place between two pieces of plastic wrap; pound to 1/8-inch thickness.

1 cup teriyaki marinade
1 cup light brown sugar
1 cup dried cranberries
2 teaspoons garlic granules
2 teaspoons crushed red pepper flakes
1 teaspoon white wine vinegar
1/2 teaspoon black pepper

  • Combine last 7 ingredients and mix well.

2 pounds beef top round, thinly sliced

Steps:
