Tips:

  • Prep Your Cornish Game Hens:Before starting, ensure the hens are thawed and at room temperature. Remove any excess fat or giblets from the cavity.
  • Make Sure Your Curry Paste is Fresh:The freshness of curry paste significantly impacts the final flavor of the dish. Use a recently opened jar or make your own paste for the best results.
  • Keep an Eye on the Apricot Jam: Apricot jam tends to caramelize quickly. Stir it constantly to prevent it from burning and becoming bitter.
  • Don't Overcrowd the Pan:To ensure the Cornish game hens cook evenly, avoid overcrowding the roasting pan. If necessary, use two pans.
  • Let the Hens Rest:After roasting, let the hens rest for 10-15 minutes before carving. This allows the juices to redistribute, resulting in more tender and flavorful meat.

Conclusion:

An irresistibly delicious and elegant dish, the Cornish game hen with curried plum glaze will be the star of any special occasion dinner. The tender, juicy meat is complemented perfectly by the sweet and tangy glaze. Whether you choose to stuff your hens or serve them whole, this recipe offers a delightful culinary experience. So gather your ingredients, preheat your oven, and embark on a culinary journey that will tantalize your taste buds and impress your guests. Bon appétit!
