I've gotten great response at our church dinners and senior groups whenever I bring this thick easy-to-fix soup. I usually take home an empty pot and often get requests for the recipe. The flavor seems to improve with leftovers...if there are any! -Evelyn Buford, Belton, Missouri

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients prepped and measured out. This will help you stay organized and make the cooking process go more smoothly.
  • Use Fresh Ingredients: Fresh ingredients will give your soup the best flavor. If possible, use fresh vegetables, herbs, and spices.
  • Brown the Beef: Browning the beef before adding it to the soup will help to develop its flavor and give the soup a richer color.
  • Use a Variety of Beans: Using a variety of beans will give your soup a more complex flavor and texture. Black beans, kidney beans, and pinto beans are all good choices.
  • Add Some Heat: If you like your soup spicy, add some diced jalapeƱos or chili powder. You can also add a can of diced tomatoes with green chilies.
  • Simmer for Flavor: Let the soup simmer for at least 30 minutes, or longer if you have time. This will allow the flavors to develop and meld together.
  • Garnish Before Serving: Before serving, garnish the soup with fresh cilantro, sour cream, and shredded cheese. This will add a pop of color and flavor to the soup.
