Time 35m

Yield 6 servings

Number Of Ingredients 16

2 cups mayonnaise
1 cup milk
1 cup sour cream
1 tablespoon minced fresh parsley
1 tablespoon minced fresh cilantro
1 teaspoon chili powder
1/2 teaspoon cumin
A few dashes hot sauce, or to taste
1 clove garlic, grated
Salt and freshly ground black pepper
3 ears corn, shucked
3 heads green leaf lettuce, torn into chunks
2 cups halved red grape tomatoes
1/2 red onion, diced
1 cup grated Monterey Jack cheese
2 cups crushed-up tortilla chips

Steps:

  • For the dressing: Mix together the mayonnaise, milk, sour cream, parsley, cilantro, chili powder, cumin, hot sauce, garlic and salt and pepper to taste in a medium bowl. Set aside.
  • For the salad: Prepare a grill pan or grill for medium-high heat. Grill the corn until nice and golden, with good grill marks on the kernels, 10 to 12 minutes. Allow to cool a bit, then cut the kernels off the cobs.
  • Add all the salad ingredients to a bowl in layers: first the lettuce, followed by the tomatoes, corn, red onions, cheese and tortilla chips.
  • Pour the dressing into a small serving bowl and serve alongside the salad.

Tips for a Flavorful Mexican Salad

  • Choose ripe vegetables: The flavor of your salad will depend on the quality of your ingredients. Make sure to use ripe, in-season vegetables. Tomatoes, corn, bell peppers, and avocados are all great choices for a Mexican salad.
  • Roast the corn and peppers: Roasting the corn and peppers adds a delicious smoky flavor to the salad. You can roast them in the oven or on the grill. If you're using a grill, be sure to keep a close eye on them so they don't burn.
  • Use a variety of textures: A good Mexican salad should have a variety of textures. Crunchy vegetables, such as bell peppers and cucumbers, contrast nicely with softer ingredients, such as tomatoes and avocado. You can also add some toasted nuts or seeds for a bit of extra crunch.
  • Make a flavorful dressing: The dressing is an important part of any salad. For a Mexican salad, you'll want to use a dressing that is flavorful and tangy. A simple vinaigrette is a good option, or you can try a more complex dressing made with yogurt, lime juice, and cilantro.
  • Serve the salad immediately: Mexican salad is best served immediately after it is made. The flavors will meld together and the vegetables will stay crisp.

Conclusion

Mexican salad is a refreshing and flavorful dish that is perfect for any occasion. It is easy to make and can be customized to your liking. With so many delicious variations, you're sure to find a Mexican salad that you love.
