Time 1h

Yield 12

Number Of Ingredients 13

1 ½ tablespoons olive oil
1 pound ground turkey
1 onion, chopped
2 green bell peppers, seeded and chopped
5 carrots, peeled and sliced into rounds
1 tablespoon chili powder
1 ½ teaspoons ground cumin
1 teaspoon ground black pepper
2 (14.5 ounce) cans canned diced tomatoes with their juice
1 cup frozen corn
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can garbanzo beans, drained and rinsed
1 ½ cups chicken broth

Steps:

  • If using turkey, heat oil in a large saucepan over medium-high heat, and cook and stir the ground turkey for about 10 minutes, breaking it up with a spoon as it cooks, until the meat is no longer pink. Remove the turkey meat and set aside, leaving oil in the pan.
  • Place the onion, green peppers, and carrots into the saucepan, and cook and stir for about 10 minutes, until the onion is translucent and the vegetables are tender. Stir in the chili powder, cumin, and black pepper, and pour in the diced tomatoes, frozen corn, black beans, garbanzo beans, and chicken broth. Bring the mixture to a boil.
  • Place about 1 1/2 cups of the chili mixture into a food processor, and puree for about 1 minute until smooth. Pour the puree back into the rest of the chili to thicken. Add the cooked turkey meat, and bring the chili back to a simmer over medium-low heat.

CHICKPEA AND CHILLI SALAD

Chickpea and Chilli Salad image

A salad that is quick and easy and ready to enjoy in minutes. Please note that cooking time is the marinating time. From 'In my kitchen', Jan/Feb 2010.

Provided by Kiwi Kathy

Categories     Vegetable

Time 13m

Yield 4 serves, 4 serving(s)

Number Of Ingredients 10

2 (400 g) cans chickpeas, drained and rinsed
2 tomatoes, medium, roughly chopped
4 spring onions, thinly sliced
1 chili, red deseeded and thinly sliced
4 tablespoons coriander leaves, roughly chopped
2 tablespoons lemon juice
1 garlic clove, crushed
2 tablespoons olive oil
salt and pepper, to taste
pita bread, grilled and cut into thin fingers

Steps:

  • Combine first 5 ingredients in a shallow bowl.
  • Make salad dressing by combining, lemon juice, garlic, olive oil and salt and pepper in a screw top jar and shake well.
  • Pour over salad, cover and leave for 10 minutes at room temperature for the flavours to mingle.
  • Serve with grilled Pita bread fingers.

Tips:

  • Cook the chickpeas properly: Soaking the chickpeas overnight and cooking them until tender is crucial for the best texture and flavor. Using canned chickpeas is a time-saving alternative if you're short on time.
  • Choose ripe and flavorful tomatoes: The sweetness and juiciness of ripe tomatoes enhance the salad. Look for tomatoes that are plump, brightly colored, and free of blemishes.
  • Use fresh herbs: The aromatic flavors of fresh herbs like cilantro and mint add a refreshing touch to the salad. If you don't have fresh herbs on hand, you can use dried herbs, but use half the amount as they are more concentrated.
  • Don't overcrowd the pan when cooking the chili: To ensure even cooking and prevent steaming, cook the chili in batches if necessary. Overcrowding the pan can result in soggy, undercooked chili.
  • Season to taste: Always taste the salad before serving and adjust the seasonings accordingly. Add more chili powder, cumin, or salt if needed.

Conclusion:

This chickpea and chili salad is a delightful fusion of flavors and textures. The combination of zesty chili, tender chickpeas, refreshing tomatoes, and fragrant herbs creates a satisfying and nutritious meal. It's perfect for a quick lunch, a light dinner, or as a side dish for grilled meats. Whether you're a vegetarian or simply looking for a healthier alternative, this salad delivers a burst of flavor and essential nutrients. Enjoy it as part of a balanced diet and savor the taste of wholesome goodness.
