4 tablespoons dijon mustard
salt and pepper (to taste)
2 tablespoons olive oil (divided)
1 pound mushrooms (sliced)
4 shallots (diced)
3 cloves garlic (minced)
2 cups heavy cream or half-and-half
1/4 cup fresh tarragon (chopped)

Steps:

  • Brush both sides of chicken breasts with dijon mustard. Season generously with salt and pepper.
  • Heat 1 tablespoon olive oil in a skillet over medium-high heat. Cook the chicken breasts until they reach an internal temperature of 165 degrees, flipping half way through. This should take about 6 to 8 minutes if using thin chicken breasts.

4 boneless skinless chicken breast halves

1/2 cup heavy cream

4 boneless, skinless chicken breast halves (about 1 1/2 pounds)
Salt and freshly ground black pepper
2 teaspoons extra-virgin olive oil
1 small shallot, finely chopped (about 3 tablespoons)
1/4 cup dry vermouth or dry white wine
3/4 cup heavy cream
2 to 3 tablespoons coarsely chopped fresh French tarragon
1 teaspoon freshly squeezed lemon juice

  • 1. Browning the chicken. Season both sides of the chicken breasts with salt and pepper. Heat the oil in a large (10 to 12-inch) skillet over medium-high heat. Two 14-ounce cans chicken broth
4 boneless, skinless chicken breasts, 6 to 8 ounces
2 tablespoons butter
2 tablespoons flour
1 tablespoon Dijon mustard
