Categories     Chicken

Time 20m

Yield 8 serving(s)

Number Of Ingredients 9

1 cup low-fat mayonnaise (plain yogurt is another possibility although I haven't tried it) or 1 cup salad dressing (plain yogurt is another possibility although I haven't tried it)
2 tablespoons lime juice
1 1/2 teaspoons curry powder (or more to taste)
4 1/2 cups cooked chicken, chopped
2 chopped apples or 2 granny smith apples
1 cup dried sweetened cranberries (Craisins)
1 cup thinly sliced celery
1/2 cup chopped pecans
1/4 cup chopped scallion

Steps:

  • Combine mayonnaise, lime juice and curry powder in large mixing bowl.
  • Stir in remaining ingredients.

Tips:

  • Use fresh, high-quality ingredients: The quality of your ingredients will greatly impact the taste of your chicken salad. Use fresh, organic chicken, crisp apples, and tart cranberries.
  • Don't overcook the chicken: Overcooked chicken is dry and tough. Cook the chicken until it is just cooked through, then remove it from the heat and let it cool.
  • Chop the ingredients evenly: This will help ensure that the chicken salad has a consistent texture.
  • Use a light hand with the mayonnaise: Too much mayonnaise can make the chicken salad heavy and greasy. Use just enough mayonnaise to bind the ingredients together.
  • Season the chicken salad to taste: Add salt, pepper, and other seasonings to taste. You can also add a bit of lemon juice or Dijon mustard for a tangy flavor.
  • Chill the chicken salad before serving: This will help the flavors to meld and the chicken salad to firm up.

Conclusion:

Chicken salad with dried cranberries and apples is a delicious and refreshing dish that is perfect for a light lunch or dinner. It is also a great way to use up leftover chicken. With its sweet and tart flavors, this chicken salad is sure to please everyone at your table.
