CHEWY APPLE OATMEAL COOKIES

Chewy Apple Oatmeal Cookies image

I had "inherited" bags and bags of apples and was trying to use them up and found this recipe in the August/September 2006 Taste of Home magazine that was chock full of other apple recipes. In the second batch, I added walnuts which were also a very nice addition. Even though the recipe calls for dried apples, don't let that make you hesitate in making these. I used chopped apples - 1 cup - and they were delicious! Also, be sure to flatten these a bit on the cookie sheet, they do not spread out while baking.

Time 50m

Yield 48 cookies, 48 serving(s)

Number Of Ingredients 10

1 cup butter, softened
1 cup packed brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
3 cups old fashioned oats
1/2 cup chopped dried apple

Steps:

  • In a large mixing bowl, cream butter and sugars.
  • Beat in eggs and vanilla.
  • Combine the flour, cinnamon and baking soda.
  • Gradually add to creamed mixture and mix well.
  • Fold in oat and apples.
  • Drop by rounded tablespoons 2 inches apart onto ungreased baking sheets. Bake at 350°F for 10-12 minutes. Let stand for 1 minute before removing to wire racks.

Tips:

  • Use ripe apples. This will ensure that your cookies are moist and flavorful. Feel free to experiment with different apple varieties, such as Granny Smith, Honeycrisp, or Pink Lady.
  • Don't overmix the dough. Overmixing can result in tough cookies. Mix the dough just until the ingredients are combined.
  • Chill the dough before baking. This will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until they are just set. Overbaking can result in dry, crumbly cookies. The edges of the cookies should be golden brown and the centers should be slightly soft.
  • Let the cookies cool completely before storing them. This will help them to maintain their shape and texture.

Conclusion:

These chewy apple oatmeal cookies are a delicious and healthy treat that are perfect for any occasion. They are easy to make and can be customized to your liking. So next time you're looking for a sweet snack, try these cookies!
