- In a 1-1/2-qt. baking dish coated with cooking spray, layer half of the bread cubes, cheese and chilies. Repeat layers. , In a large bowl, whisk the eggs, egg whites, milk, mustard, salt and pepper; pour over top. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. - Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- Preheat oven to 325 degrees F (165 degrees C).
- Melt butter in the microwave, or in a small pan on the stove over low heat. Spray a 9x12 inch baking dish with vegetable spray. Place croutons in the bottom of the dish, and drizzle with melted butter. Sprinkle with grated Cheddar cheese.
- Crack the eggs into a bowl, whisking to break up the yolks. Add milk, peppers, mustard, salt, and pepper, and beat until well-combined. Pour over the croutons and cheese, and sprinkle with crumbled bacon.
- Bake in the preheated oven for 40 minutes. Remove from oven and allow to stand 10 minutes before serving.

- 1. Make the night before: Place croutons in bottom of a greased 9 x 13 pan. Mix 2 cups cheese, mushrooms and crumbled sausage in a bowl. Mix well. spread over croutons.
- 2. Combine eggs, milk, soup and mustard in a bowl. Mix well. Pour egg mixture over ingredients in pan, DO NOT STIR. Cover with foil, regrigerate, overnight.
- 3. Bake uncovered at 350 degrees for 1 hour 15 minutes or until set. Cheese will make it oist. Take out of oven, sprinkle with 1 cup remaining grated cheese. Let sit for at least 15 to 20 minutes until cheese on top melts. Serve.
