4 cups water
salt and ground black pepper to taste
1 cup stone-ground grits
2 cups shredded sharp Cheddar cheese
3 tablespoons butter
1 pound shrimp, peeled and deveined
6 slices bacon, chopped
1 cup thinly sliced scallions
2 tablespoons chopped fresh parsley
1 large clove garlic, minced
4 teaspoons lemon juice

Steps:

  • Bring water to a boil in a pot. Add salt and pepper. Stir in grits; reduce heat and let simmer until water is absorbed, 20 to 25 minutes. Remove from heat and stir in Cheddar cheese and butter.
  • Rinse shrimp and pat dry.

3/4 teaspoon salt
2 cups quick-cooking grits
2 cups shredded cheddar cheese
1/2 cup butter, cubed
8 bacon strips, chopped
2 pounds uncooked shrimp (26-30 per pound), peeled and deveined
4 garlic cloves, minced
1 tablespoon Cajun seasoning
1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes

Steps:

  • In a large saucepan, bring water and salt to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, until thickened, about 5 minutes, stirring occasionally. Remove from heat. 1 ½ cups chicken broth
1 ½ cups evaporated milk
¾ cup quick-cooking grits
½ teaspoon salt
1 cup shredded Cheddar cheese
1 cup chopped raw bacon
2 tablespoons bacon drippings
1 pound uncooked medium shrimp, peeled and deveined
½ cup diced green bell pepper
½ cup diced onion
1 tablespoon shredded Cheddar cheese, or as desired

Steps:

  • Bring chicken broth and evaporated milk to a boil in a large saucepan; stir in grits and salt and return to a boil. Reduce heat to low, cover, and simmer grits until thick, stirring often, about 5 minutes. Stir in 1 cup Cheddar cheese until melted. Set grits aside and keep warm.

2 cups low-sodium chicken stock, plus more if needed
2 cups cream, plus more if needed
4 tablespoons unsalted butter
3/4 cup grits or polenta
4 ounces American cheese, torn into pieces
1/2 cup grated Parmesan
Kosher salt and freshly cracked black pepper
1 small orange bell pepper, cut in small dice
1 small red bell pepper, cut in small dice
1/2 Spanish onion, cut in small dice
3 tablespoons olive oil
1 pound Parmesan-parsley pork sausage, cut into 1/4-inch-thick rounds
4 cloves garlic, minced
1 pound uncooked large shrimp, peeled, deveined and cut into thirds
1/2 cup low-sodium chicken stock
1 tablespoon unsalted butter
Chopped fresh parsley, for garnish

Steps:

  • For the grits: Bring the chicken stock, the cream and butter to a simmer in a heavy saucepan. Gradually whisk in the grits. Reduce the heat and simmer until the grits have thickened, 15 to 20 minutes, stirring occasionally to avoid lumps.   • Bring 4 cups broth and 1/2 t salt to boil in large saucepan, stir in grits slowly stirring constantly. Cover, reduce heat, stirring occasionally for 20 minutes. While grits are cooking saute onions, pepper, garlic and shrimp about 5 minutes until shrimp are done and vegetables cooked. Once grits have cooked, stir in chesse until cheese melts. Add the shrimp mixture and the drained Ro-tel. Sprinkle top with another 1/2 cup of cheese. Bake at 350' for 30-45 minutes.
