CHEESY MEATLOAF

Cheesy Meatloaf image

Easy, freezes well (raw), and can be tripled. If you sub in ground turkey, that is good too. While I was still working I would put meatloaf in oven (frozen) with baker potatoes (wrapped in foil) and baked carrots in the morning before I left the house, and set up my delay bake cycle on my oven and come home to a nice meal. If you do have leftovers, you can cube the leftovers up and add to spaghetti sauce or make yourself a sandwich.

Categories     Meat

Time 1h25m

Yield 4 serving(s)

Number Of Ingredients 10

1 lb ground beef
1 cup breadcrumbs
6 ounces tomato juice
1/4 cup onion, chopped
1 egg
4 olives, sliced
1/8 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon italian seasoning
1/2 cup mozzarella cheese, shredded

Steps:

  • Mix first nine ingredients.
  • Put half of meat mixture into loaf pan.
  • Top with shredded mozzarella.
  • Then cover with rest of the meat mixture.
  • Bake at 350°F oven for 1 hour and 15 minutes.
  • If you freeze it (raw), double wrap in foil.
  • To make in crockpot (which I have not done yet)--put 3 heavy duty foil strips, each measuring 18 X 3 inches in a crisscross so they resemble spokes of a wheel in crock pot. Place meatloaf in the center of the strips. Pull the foil strips up and over the meatloaf. Cover. Use the foil as handles to lift out. Estimating time at 8 hours on LOW or 4 hours on HIGH. Also, read that you can cut up two potatoes, into finger size pieces and put that underneath the meatloaf in crock pot. Ummm.

MY MAN'S CHEESY SMOKED MEATLOAF

Trying this, I believe you will love it. It has been a success. Good with red wine and twice-baked potatoes for homecooked TLC.

CHEESY CROCK POT MEATLOAF WITH VEGGIES

Cheesy Crock Pot Meatloaf with Veggies image

There are times I'd rather be in my craft room or out in the garden rather than in the kitchen. Meatloaf in the crock pot equals free time to do other things. Meatloaf is one of my favorite meals. There are so many variations to making meatloaf and I don't think I ever make it the same way twice. Today I wrote this variation...

Provided by Diane Atherton

Categories     Meatloafs

Time 4h10m

Number Of Ingredients 25

MEATLOAF
2 lb ground beef (other meats can be substituted, ground pork, ground turkey, ground chicken, bulk sausage or a mixture of meats)
1 c bread crumbs, i used panko
1/2 c onion, chopped
1/2 c green bell pepper, chopped
3 clove garlic, minced
1/4 c ketsup
1 tsp mustard
2 large eggs
1/2 Tbsp fennel seed
1 tsp basil, dried
1 tsp salt
1 tsp pepper
VEGGIES
4 to 6 medium potatoes, quartered
3 or 4 large carrots, cubed
2 Tbsp olive oil, extra virgin
seasoning of choice (i used salt and pepper, you could use any desired seasonings) a little rosemary would be good
TOPPING
1/2 c tomato sauce
oregano, dried to taste
garlic powder, to taste
onion powder, to taste
salt and pepper to taste
mozzarella cheese, shredded (optional)

Steps:

  • 1. TIPS: If you grind meat yourself, add the fennel seed and grind with the meat. Spray crock with PAM for easier clean up.
  • 2. In a large bowl; add ingredients for meatloaf. With hands combine the mixture.
  • 3. Form meat mixture into a loaf and place in the center of Crock Pot. Place potatoes and carrots around meatloaf. Drizzle oil on veggies and season before adding to the pot. Place the vegetables around the meatloaf. NOTE: would have been easier if I had seasoned the vegetables and drizzled oil before I putting them in the crock pot.
  • 4. Combine ingredients for topping except for the mozzerella; set aside.
  • 5. Cook on high for 4 hours. The last hour of cooking, remove lid and add the tomato sauce topping mixture to the top of the meatloaf; cover with lid. Once done, turn crock pot off, remove lid and add mozzerella to top of meatloaf, cover with lid and let set for about 15 minutes before serving. NOTE: The meatloaf will brown but not like it would if you baked it in an oven.
  • 6. NOTES: Meatloaf is a dish of ground meat formed into a loaf shape, mixed with egg and breadcrumbs, then baked or in this case cooked in the crock pot. The loaf shape is formed by either cooking it in a loaf pan, or forming it by hand. Meatloaf is usually made from ground beef, although lamb, pork, veal, venison, bulk sausage and poultry or a combination of meats are also used. Variations are unlimited! Different taste for different folks. Choose seasoning that you like. You could add diced potatoes to the meat mixture and cubes of cheddar and/or mushrooms. You can even have a stuffed meatloaf, 2 layers of meat with a cheesy mushroom and onion filling. If you don't like a tomato sauce topping, leave off but I wouldn't leave off the cheese ;) Other toppings; BBQ sauce, Ketchup, or no topping at all. It really depends on the seasonings you choose. OK pull out that crock pot and get to crocking! HAPPY COOKING!

1 egg, slightly beaten
1 1/2 Tbsp worcestershire sauce
1 /2 tsp pepper
1/2 tsp salt
1/2 c milk
1/2 c onion,chopped
1/3 c dry bread crumbs
1 c cheddar or monterey jack cheese - grated
1 can(s) mushroom pieces - drained or 4 oz. fresh mushrooms - chopped and sauteéd in butter until
3/4 c ketchup
1/4 c brown sugar

Steps:

  • 1. Combine beef, egg, Worcestershire sauce, pepper, salt, milk, onion and bread crumbs in a large mixing bowl. Mix well. Roll out onto wax paper into an 8x5 rectangle, 1/2 inch thick. Sprinkle cheese and mushroom on top of beef mixture. Roll lengthwise like a jelly roll. Place seam side down in baking dish. Bake for one hour at 350°
  • 2. Blend brown sugar and ketchup. Spread over loaf as soon as it comes out of the oven. May not need to use all of the ketchup mixture on top.
  • 3. With the addition of cheese in this meatloaf recipe the result is a more savory and rich flavor than most meatloaves.

Tips:

  • Choose the right ground beef. For a flavorful and juicy meatloaf, use a combination of ground chuck and ground sirloin. The chuck will provide richness and flavor, while the sirloin will add lean protein.
  • Use fresh, high-quality ingredients. The better the ingredients you use, the better your meatloaf will taste. Look for fresh, organic produce and high-quality cheese.
  • Don't overmix the meatloaf mixture. Overmixing can make the meatloaf tough. Mix just until the ingredients are combined.
  • Let the meatloaf rest before slicing. This will help the meatloaf hold its shape and prevent it from falling apart.
  • Serve the meatloaf with your favorite sides. Mashed potatoes, roasted vegetables, and gravy are all classic choices.

Conclusion:

This cheesy meatloaf is a delicious and comforting dish that is perfect for a family dinner. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make a meatloaf that is moist, flavorful, and sure to please everyone at the table.
