Tips for a Finger-Licking Cheesy California Chicken Casserole

- For a gooey and stretchy cheese pull, use a combination of mozzarella and cheddar cheeses. - To ensure the chicken is cooked through, use a meat thermometer to check that it has reached an internal temperature of 165°F (74°C). - If you don't have diced green chilies, you can substitute a small can of roasted green chilies, drained and chopped. - For a crispy topping, crush the cornflakes into fine crumbs before mixing them with the melted butter. - If you want to make the casserole ahead of time, assemble it and bake it for 30 minutes, then cover and refrigerate for up to 3 days. Before serving, remove from the refrigerator and let it come to room temperature for 30 minutes, then bake for an additional 15-20 minutes, or until heated through.
