2 tablespoons vegetable oil
1 small onion, chopped
1 pound skinless, boneless chicken breast halves - chopped
2 (32 fluid ounce) containers chicken broth
1 large head fresh broccoli, cut into bite size pieces
8 ounces processed cheese food, shredded
1 cup shredded Cheddar cheese
salt and pepper to taste
4 cups uncooked instant rice

Steps:

  • Heat the oil in a skillet over medium heat. Cook the onion and chicken in the skillet 5 minutes, or until chicken juices run clear; drain.
  • Bring the chicken broth to a boil in a large pot, and stir in the broccoli, processed cheese food, and Cheddar cheese. Mix in the chicken and onion. Season with salt and pepper. ½ cup butter
1 cup all-purpose flour
11 cups water
3 cubes chicken bouillon
2 pounds skinless, boneless chicken breast halves - cut into bite-size pieces
2 heads fresh broccoli, cut into florets
1 ½ teaspoons salt
1 teaspoon ground black pepper
1 cup light cream
3 cups shredded Cheddar cheese

Steps:

  • In a 5-quart pot, melt butter over medium heat. Mix in flour, stirring constantly until a thick paste forms. Remove from pot, and set aside.
  • In same pot, combine water, bouillon cubes, chicken, broccoli, salt and pepper. Bring to boil over high heat. Reduce heat to medium low, and simmer for 45 minutes.
  • Stir in the flour mixture a little bit at a time until soup thickens. Simmer 5 minutes. Reduce heat, and stir in cream. Mix in cheese 1 cup at a time, and stir until melted.

2 pounds of chicken tenders cut into chunks.

Stir some of the soup broth into the flour mixture until there is a smooth consistence and then add flour mixture to soup. Bring back to a boil and simmer for 5 minutes. Reduce heat and add the light cream, shredded cheddar cheese. Mix well and serve when the cheese is completely melted.
