2 pounds white-fleshed skinless fish fillets such as flounder, sole, or corvina (cod)
Salt
1 cup fresh lime juice (about 12 limes)
1/2 teaspoon salt
1 small clove garlic, chopped very fine
1 or 2 fresh aji amarillo (yellow Peruvian chili), seeded and chopped fine, or substitute the canned aji
1 teaspoon chopped parsley
1 teaspoon chopped cilantro
1 medium onion, chopped fine (1/2 cup)
3 or 4 lettuce leaves
4 ears of corn, cooked and cut into 2-inch pieces
1 pound sweet potatoes, roasted in the skin, peeled, and sliced into 1/2-inch-thick rounds

SCALLOP, SHRIMP, AND SQUID "CEVICHE"

Scallop, Shrimp, and Squid

Yield Makes 6 (first course) servings

Number Of Ingredients 7

1 cup fresh Seville orange juice (or 1/2 cup regular fresh orange juice plus 1/2 cup fresh lime juice)
1 tablespoon bottled ají amarillo chile purée (often labeled "crema")
1/4 cup finely chopped red onion
1/2 pound cleaned squid
1/2 pound sea scallops, tough ligament removed and scallops halved horizontally
1/2 pound large shrimp in shell (21 to 25 per pound), peeled and deveined
1/4 cup chopped cilantro

Steps:

  • Whisk together juice, chile purée, onion, and 1 1/2 teaspoons salt in a large bowl for marinade.
  • Halve squid tentacles lengthwise and cut bodies (including flaps, if attached) crosswise into 1/4-inch rings.
  • Poach scallops and shrimp in a medium pot of barely simmering water, stirring occasionally, until barely cooked through, about 1 minute. Stir in squid and cook, stirring occasionally, until just tender, about 40 seconds.
  • Drain seafood well in a colander and add to marinade. Marinate, uncovered and chilled, at least 3 hours (for flavors to develop).
  • Just before serving, stir in cilantro. Spoon seafood into shallow bowls with a slotted spoon, then spoon marinade over it.

Tips:

  • Choose fresh calamari. This is key to making a great ceviche. Look for calamari that is firm and white, with no brown spots. Avoid calamari that is slimy or has a strong odor.
  • Clean the calamari properly. This involves removing the head, tentacles, and ink sac. Be sure to remove the tough membrane from the body of the calamari as well.
  • Cut the calamari into small pieces. This will help the ceviche to cook evenly.
  • Use a good quality ceviche marinade. This is what will give your ceviche its flavor. There are many different recipes for ceviche marinade, so experiment until you find one that you like.
  • Marinate the calamari for at least 30 minutes. This will allow the flavors of the marinade to penetrate the calamari.
  • Serve the ceviche immediately. Ceviche is best when it is served fresh.

Conclusion:

Ceviche de calamari is a delicious and refreshing dish that is perfect for a summer meal. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a light and healthy meal, give ceviche de calamari a try!
