Steps:
- 1. Preheat oven to 375°.
- 2. Mix together the Catalina dressing, onion soup mix, and apricot jam. Stir to blend well; set aside.
- 3. Use a meat mallet to pound the thawed (if previously frozen) chicken breasts. This allows for uniformity in thickness for better cooking, and also makes the breasts very tender and delicious.
- 4. Arrange chicken breasts - touching - in an ungreased 13 x 9" baking pan. Pour dressing mixture over all chicken. Bake for approx. 30 minutes, until juices run clear, and the breasts have a nice 'glazed' appearance.
- 5. Serve with rice and a nice salad or pretty green vegetable!
Tips:
- Use a good quality Catalina dressing. This is the key ingredient in the dish, so make sure it's flavorful and has a good balance of sweet and tangy.
- Don't overcook the chicken. Chicken breasts are very lean and can easily become dry and tough if overcooked. Cook them just until they are cooked through, about 10-12 minutes per side.
- Use a variety of vegetables. This will add color, flavor, and nutrients to the dish. Some good choices include bell peppers, onions, mushrooms, and zucchini.
- Serve the chicken over rice or pasta. This will help to soak up the delicious sauce.
- Garnish the dish with fresh herbs, such as cilantro or parsley. This will add a pop of color and flavor.
Conclusion:
Catalina chicken is a quick and easy weeknight meal that is sure to please the whole family. It's also a great way to use up leftover chicken. With its sweet and tangy sauce, tender chicken, and colorful vegetables, this dish is sure to be a hit.
