But the flavour in this one is much more intense so you don't need nor do you want more sauce, it will be too salty!SPICINESS: Nice buzz to it from 1/2 a fresh chilli, not blow-your-head-off spicy.

2 tbsp peanut oil ((or canola or vegetable oil))
1/2 cup raw cashews (, unsalted (Note 1 for roasted))
1 garlic clove (, finely minced)
1/2 onion ((brown, yellow, or white), cut into thin wedges)
200g/7oz chicken thighs (, skinless and boneless, sliced into 1cm / 1/3" thin strips (Note 2))
2 green onions (, cut into 2.5cm / 1" lengths, white part separated from green part)
1/2 red cayenne pepper (, deseeded and finely sliced on the diagonal (omit or reduce if preferred) (Note 3))
1 tbsp oyster sauce ((Note 4))
1 tsp dark soy sauce ((Note 5))
2 tsp fish sauce ((Note 6))
1 tsp white sugar
3 tbsp water
Red chilli (, finely sliced (optional garnish))
Jasmine rice (, for serving (or other rice of choice))

Steps:

  • Sauce: Mix all the Sauce ingredients in a small bowl.
  • Cook cashews: Heat oil over medium heat in a wok or large skillet. Add cashews and cook for 5 minutes until they become a dark golden colour and crunchy (yep, you might have to eat one to check!). Remove from skillet with a slotted spoon.
  • Garlic & onion: Turn heat up to high. Add garlic and onion. Cook for 30 seconds.
  • Chicken: Add chicken. Cook for 1 minute until the outside changes from pink to white.
  • White part of green onion & chilli: Add white part of green onions and chilli. Cook for 1 minute until chicken is just cooked through.
  • Add Sauce: Cook for 1 minute until it reduces down to a syrup, coating the chicken nicely.
  • Green onion & cashews: Add green part of green onions and cashews. Toss for 30 seconds.
  • Serve: Transfer to serving dish. Serve with jasmine rice, or other rice of choice, garnished with extra red chilli (if you can handle the heat!).

8 Oz Cashew Nuts (Unsalted)
1 Stem Spring Onion (Sub with Chives)
1 Stem Mint (For Garnish)
½ Tsp Table Salt
1 Red Spur Chili
4 Kaffir Lime Leaves
¾ Cup Tiny Fried Fish ((Optional))
2 Cups Cooking Oil

Steps:

  • Add cashew nuts into a cold pan. Place on the stove top, add medium to high heat frying oil such as sustainable palm oil and heat.
  • Stir the cashew nuts as the oil heats up to stop them burning.
  • When the cashews are sizzling and a golden brown colour drain them out onto a kitchen paper towel to let them cool down. Pat the top surface to reduce any surface oil.
  • Chop the spring (green) onion tops and spur chili into small pieces.
  • Wash surfaces of the kaffir lime leaves, tear the spine out. Roll the leaves up and finely julienne.
  • Add back to the pan the mostly cooled down cashews, chopped chili, kaffir lime leaf and green onion tops. Sprinkle over a half teaspoon of table salt and mix together.
  • Serve out on a nice plate and garnish with mint leaves.

A wonderfully spicy Thai dish. I created this when I fell in love with a dish at a Thai restaurant. It is very good served over jasmine rice. Fish sauce can be found in any Asian market, or the Asian section of the supermarket.

¼ cup soy sauce
¼ cup fish sauce
1 ½ tablespoons hot pepper sauce
3 cloves garlic, minced
1 tablespoon minced fresh ginger root
4 skinless, boneless chicken breast halves - cut into thin strips
1 cup dry jasmine rice
2 cups water
1 tablespoon sesame oil
3 tablespoons brown sugar
1 small onion, quartered then sliced
¾ cup water
3 tablespoons creamy peanut butter
1 cup unsalted cashew nuts

Steps:

  • In a resealable plastic bag, mix the soy sauce, fish sauce, hot pepper sauce, garlic, and ginger. Place the chicken in the bag, seal, and marinate at least 2 hours in the refrigerator.
  • In a medium saucepan, bring the jasmine rice and 2 cups water to a boil. Reduce heat, cover, and simmer 20 minutes.
  • Heat the sesame oil in a large skillet over medium heat. Stir in the brown sugar until dissolved. Stir in the onion, and cook about 5 minutes, until tender. Reserving the marinade mixture, place the chicken into the skillet, and cook about 10 minutes, until browned.
  • Stir the reserved marinade and 3/4 cup water into the skillet, and bring to a boil. Continue to cook and stir 10 minutes, or until the chicken is no longer pink and juices run clear. Thoroughly blend in the peanut butter. Serve over the jasmine rice with a sprinkling of cashews.

We fell in love with something very similar to this on a recent trip to Thailand. This is husband Russ's very good attempt at making them at home. We were able to buy the fried garlic and fried shallots at a local Asian supermarket. Very, very morish! Our cashews weren't salted but we used around half a teaspoon, so salt is to taste.

2 tablespoons oil
10 kaffir lime leaves, shredded
2 teaspoons chili flakes (to taste)
200 g roasted cashews
2 tablespoons fried shallots
2 tablespoons fried garlic
salt

Steps:

  • Heat the oil in a pan over medium heat, add in the shredded lime leaves and chilli flakes and fry just until the leaves change colour.
  • Remove from the heat and drain off any oil you can. Add the cashews to the pan and stir over a low heat for a minute or so.
  • Remove from the heat and add the shallots, garlic and salt to taste. Try to not eat the lot!

This is my take on a popular bar snack in Thailand: freshly fried cashews tossed with salt, chiles, scallions, and lime zest. Simple but so good with a beer.

Vegetable oil, for shallow frying
1 cup raw cashews
1 teaspoon kosher salt
2 teaspoons light brown sugar
2 scallions, thinly sliced
2 teaspoons Roasted Chile Powder
2 teaspoons grated lime zest

Steps:

  • Fill a small saucepan with 1 inch oil and set over medium heat. Line a plate with paper towels and set it near the stove.
  • When the oil is shimmering-hot, carefully add the cashews and fry, stirring constantly, until light golden brown, 1 to 2 minutes. Keep in mind: The cashews will continue to cook after being removed from the oil and become a darker shade of brown, so it's best to remove them when they are still a little pale. Use a slotted spoon to transfer the cashews to the paper towels to drain.
  • Place the hot cashews in a serving bowl and sprinkle evenly with the salt and brown sugar, tossing to coat. Add the scallions, chile powder, and lime zest and toss once more. Serve warm.
