Categories     Vegetable

Time 2h10m

Yield 6 serving(s)

Number Of Ingredients 8

1 1/2 lbs carrots, sliced
1/2 cup butter
3 eggs
1 teaspoon vanilla
1/4 cup all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 cups sugar
3/4 teaspoon ground cinnamon (or to taste)

Steps:

  • Add carrots to a saucepan; add water to cover; bring to a boil; cook 20-25 minutes or until tender; drain.
  • Add carrots, butter, and the rest of the ingredients to a food processor.
  • Process until mixture is smooth.
  • Spoon mixture into a lightly greased 1 1/2 quart souffle dish.
  • Bake at 350 degrees for 1 hour and 10 minutes or until set.

Tips:

  • Choose flavorful canned carrots: Look for cans of carrots that are labeled "petite" or "baby," as these tend to have a sweeter, more tender flavor.
  • Enhance the flavor with sautéed vegetables: Sautéing vegetables like onions, celery, and garlic in butter or oil before adding them to the carrot mixture will deepen the flavor of the soufflé.
  • Use a combination of cheeses: Using a blend of cheeses, such as cheddar and Parmesan, will give the soufflé a more complex and interesting flavor.
  • Don't overbeat the egg whites: Overbeaten egg whites will make the soufflé tough and dense. Instead, beat the egg whites until they are stiff but still glossy.
  • Bake the soufflé immediately: Soufflés are best when they are baked immediately after they are assembled. This will help them to rise properly.
  • Serve the soufflé immediately: Soufflés are best served as soon as they come out of the oven. This is when they are at their lightest and fluffiest.

Conclusion:

Carrot soufflé is a delicious and easy-to-make dish that can be enjoyed as a main course or a side dish. With its light and fluffy texture and flavorful carrot filling, it's a surefire hit with family and friends. Whether you're using canned or fresh carrots, this recipe is a great way to enjoy this healthy and versatile vegetable.
