1 1/2 Tbsp honey
1/8 tsp tabasco sauce
SALAD
1 lb cooked medium shrimp, peeled and deveined
2 ripe nectarines, cut into this wedges
1 ripe avocado, seeded, peeled and sliced thin lengthwise
1/2 small red onion, peeled and thinly sliced
1 c fresh basil, cut into thin strips

  • 3. Chill in refrigerator for 30 minutes.
  • 4. Place greens on chilled plates and top with chilled salad mixture.

Tips:

  • Choose the right shrimp. Look for shrimp that are fresh, firm, and have a slightly translucent appearance. Avoid shrimp that are brown or have a slimy texture.
  • Cook the shrimp properly. Overcooked shrimp will be tough and rubbery. Cook shrimp until they are just opaque, about 2-3 minutes per side.
  • Use ripe nectarines. Ripe nectarines will be sweet and juicy. Avoid nectarines that are hard or have green flesh.
  • Make the dressing ahead of time. The dressing can be made up to 2 days in advance. This will save you time when you're ready to assemble the salad.
  • Chill the salad before serving. This will help the flavors to meld and the salad will be more refreshing.
