2 tablespoons olive oil
2 tablespoons olive oil
3 onions, sliced
2 pounds Idaho or Yukon gold potatoes, unpeeled
Kosher salt and freshly ground black pepper
1 cup whole milk
1 stick (8 tablespoons) unsalted butter

Steps:

  • Preheat the oven to 350 degrees F.
  • Slice the heads of garlic in half crosswise and drizzle with the oil. Wrap the garlic in foil and roast until creamy, about 1 hour. When cool enough to handle, squeeze the cloves into a small bowl and mash lightly with a fork.

1 Tbsp butter
8 c sliced onions
1 Tbsp sugar
1/2 tsp salt
1/4 tsp pepper
2 clove garlic, minced
3 Tbsp water
POTATOES:
4 lb yukon gold potatoes, peeled and cubed
1 c half and half
6 Tbsp butter
1 1/2 tsp salt
1/2 tsp pepper
1/4 tsp nutmeg

Steps:

  • 1. In a large non-stick skillet melt 1 tablespoon butter over medium heat. Add 8 cups onions, 1 tablespoon sugar, 1/2 teaspoon salt, amd 1/4 teaspoon pepper. Cook, stirring, until onions are browned. Reduce heat a bit more add garlic and water and continue cooking and stirring until onions are caramelized, about 20 more minutes.
  • 2. Cook potatoes in a large pot of boiling water for about 20 minutes until tender. Drain and return to pot. Heat half and half with butter until butter melts. 2/3 cup whole milk
2 tablespoons unsalted butter
