Time 55m

Yield 4 servings

Number Of Ingredients 10

1 tablespoon unsalted butter
2 tablespoons olive oil
1 medium yellow onion, thinly sliced
1 teaspoon sugar
Kosher salt and freshly ground black pepper
2 garlic cloves, minced
2 cups long-grain white rice
1 quart water
1 (15.5-ounce) can lentils, drained and rinsed
1/4 teaspoon ground cumin

Steps:

  • Melt the butter with the oil in a medium skillet over medium heat. Add the onions, sugar, and some salt and pepper. Cook until the onions become deep brown and sticky, about 20 minutes, stirring every 4 or 5 minutes (if the onions color too quickly, reduce the heat to medium-low).
  • While the onions caramelize, make the rice. Heat the remaining tablespoon of oil in a saucepan over medium heat. Add the garlic and cook, stirring, until fragrant, 30 seconds to 1 minute. Add the rice and stir, cooking it until the grains begin to turn opaque, about 2 minutes. Add the water, lentils, and cumin; season with salt and pepper. Increase heat to medium-high and bring to a boil. Reduce the heat to low, cover, and cook until the rice is tender and has absorbed all of the liquid, about 20 minutes. Serve topped with the caramelized onions.

Tips:

  • Use the right type of lentils. Brown or green lentils hold their shape well and won't disintegrate in the soup. Puy lentils are also a good choice, but they may break down more easily.
  • Rinse the lentils before cooking. This will remove any dirt or debris, and it will also help to prevent the soup from becoming cloudy.
  • Don't overcook the lentils. Lentils should be cooked until they are tender but still hold their shape. Overcooked lentils will become mushy and lose their flavor.
  • Caramelize the onions slowly and patiently. This will develop their sweetness and depth of flavor. Don't rush this step, or the onions will burn.
  • Use a good quality vegetable broth. This will make a big difference in the flavor of the soup. If you don't have vegetable broth on hand, you can use water, but the soup will be less flavorful.
  • Season the soup to taste. Add salt, pepper, and other spices to taste. You can also add a squeeze of lemon juice or a dollop of yogurt for a bit of tang.

Conclusion:

Caramelized onion and lentil soup is a delicious, hearty, and healthy meal that's perfect for a cold winter day. It's also a great way to use up leftover lentils. So next time you're looking for a quick and easy soup recipe, give this one a try. You won't be disappointed!
