Yield Makes 12

Number Of Ingredients 2

1 grapefruit
1/2 cup confectioners' sugar

Steps:

  • Preheat oven to 175 degrees. Line two baking pans with Silpats. With a very sharp knife, slice grapefruit into 1/16-inch-thick slices. Place slices on prepared baking pans.
  • Place confectioners' sugar in a strainer; sprinkle over grapefruit. Turn chips over, and coat with remaining sugar. Bake until chips glisten and have a syrupy coating, 1 1/2 to 2 hours.
  • Remove baking pans from oven; with tongs, turn chips over. Return baking pans to oven, rotating shelves. Cook until lightly golden and crispy, 1 1/2 to 2 hours. Transfer chips to rack to cool and harden.

Tips:

  • Choose a ripe grapefruit with a smooth, unblemished skin. This ensures that the fruit is fresh and juicy.
  • Use a sharp knife to cut the grapefruit into segments. This will help prevent the segments from becoming too ragged.
  • Remove the seeds from the grapefruit segments. This will make the final dish more enjoyable to eat.
  • Cook the grapefruit segments in a single layer in a skillet. This will help them caramelize evenly.
  • Do not stir the grapefruit segments too often while they are cooking. This will prevent them from breaking apart.
  • Use a timer to ensure that the grapefruit segments do not overcook. Overcooked grapefruit segments will become tough and chewy.
  • Serve the caramelized grapefruit segments immediately. They can be enjoyed on their own, or used as a topping for yogurt, ice cream, or pancakes.

Conclusion:

Caramelized grapefruit is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is a great way to use up leftover grapefruit, and it is also a healthy and refreshing treat.
