- Preheat oven to 450°F.
- Mince garlic. Using the flat part of the knife, press down on the garlic clove until it crushes. Cut off the stubby end and peel off the skin. Chop with knife.
- In skillet, sauté minced garlic, diced potatoes and onions in olive oil.
- Once brown, add a few teaspoons of water and cook another 1-2 minutes. Then add in the diced ham.
- In bowl, whisk eggs, milk, salt and pepper.
- Pour egg mixture over the ham, potatoes and onions.
- Cook over medium heat for 5 minutes, until the eggs have set around the edges or the skillet.
- Place skillet into the oven and bake at 450°F for 5-10 minutes, or until eggs have set in the middle.
- Add shredded cheese to the top and bake another 1-2 minutes until cheese melts.

- Position a rack about 8 inches from the broiler and preheat.
- Melt the butter in a medium non-stick skillet over medium heat. Add the onions and season with 1/2 teaspoon salt and some pepper. Cook, stirring occasionally, until the onions get very soft, about 15 minutes. Meanwhile, whisk the eggs and milk in a medium bowl with the remaining 1/4 teaspoon salt and some pepper until smooth. Transfer onions to a bowl to cool. Reserve the skillet.
- Stir the onions, ham, herbs and cheese into the eggs.
- Heat the non-stick skillet. Pour the frittata mixture into the pan and stir to make sure the fillings are evenly arranged. Cook, stirring gently a couple times in the first minutes of cooking. Then let the mixture cook undisturbed until the bottom sets, about 5 minutes. Transfer the skillet to the oven and broil until the eggs are just set and brown, about 5 minutes. Take care not to overcook or the eggs will be dry. Remove from the oven, cover, and set aside for 5 minutes.
- Invert the frittata onto a large plate or platter. Cut into wedges and serve warm or at room temperature.

It may take a bit longer to bake since you don't cook the eggs on the stovetop at all. Just bake it until the eggs have set in the middle.

- Preheat oven to 350 degrees. On the stove, preheat a cast iron skillet to medium heat.
- Cut bread into cubes, leaving the crust on. Also, chop deli ham into small pieces. Set both aside.
- In a large bowl, whisk together eggs, milk, and spices. Set aside.
- Melt 3 Tbsp of butter in the skillet and add the cubed bread. Gently toss with spoon until bread begins to brown and becomes crispy; about 5 minutes.
- Add last Tbsp of butter and chopped ham to skillet and cook for another 2-3 minutes until ham starts to sizzle.
- Pour egg mixture over bread and ham in skillet. Remove skillet from stove and place in oven.
