Time 45m

Number Of Ingredients 10

750 g / 1.5 lb baby potatoes (, halved (about 3.5cm / 1.75", 20 - 24 potatoes))
2 tbsp olive oil (, plus more for drizzling)
1/2 cup / 50 g grated parmesan (, the sand-like type (Note 1))
1/2 tsp garlic powder ((or sub with onion powder))
1/2 tsp dried oregano or thyme
1/2 tsp paprika
1/4 tsp salt ((I use table salt, leave out to lower sodium))
1/2 tsp black pepper
3/4 cup sour cream, or sub with plain yoghurt (, or a combination of both)
1/4 cup finely chopped green onions/scallions (, plus more for garnish (or chives))

Steps:

  • Preheat oven to 200C/400F.
  • Mix Parmesan Mixture in a bowl.
  • Drizzle oil in 22 x 33cm / 9 x 13" glass baking dish (Note 2). Tilt pan to spread all over the base.
  • Use a spoon to scatter the Parmesan Mixture over the base. Spread as evenly as you can. Once sprinkled, do not touch - don't try to spread it.
  • Place potatoes cut side down, pressing firmly.
  • Optional: drizzle top of potatoes with a touch of oil or spray with oil, then sprinkle with salt.
  • Bake potatoes for 35 - 40 minutes or until they are soft and the parmesan crust is deep golden (you can check through the glass!)
  • REST for 5 minutes. Then use an egg flip to cut between every 4 or so potatoes (i.e. cutting through the parmesan crust which bonds between each potato - see video), then scoop up 4 or so potatoes and flip them upside down so the cheese side is up on a serving platter.
  • Serve with Dipping Sauce, if using, and sprinkle over extra green onions if desired. Serve as a side dish or as nibbles!

PARMESAN POTATO BREAD

Parmesan Potato Bread image

Provided by Food Network

Time 2h45m

Yield 2 loaves

Number Of Ingredients 10

2 scant tablespoons or 2 (1/4-ounce) packages active dry yeast
2 cups warm water (about 110 degrees)
2 teaspoons salt
1 tablespoon finely minced garlic
1 tablespoon finely chopped fresh rosemary or 1 teaspoon dried rosemary
1/4 cup olive oil
2 cups coarsely shredded raw potato
1 cup finely shredded or grated Parmesan cheese
6 to 7 cups unbleached flour
Additional olive oil

Steps:

  • In a large bowl, stir yeast into water to soften. Add salt, garlic, rosemary, olive oil, potato, cheese, and 3 cups flour. Beat vigorously for 2 minutes. Gradually add flour, 1/4 cup at a time, until the dough begins to pull away from the side of the bowl.
  • Turn dough onto a floured work surface. Knead, adding flour a little at a time, until you have a smooth, elastic dough. Place dough into an oiled bowl. Turn to coat the entire ball of dough with oil. Cover with a tightly woven towel and let rise until doubled, about 1 hour.
  • Turn dough out onto a lightly oiled work surface and divide in half. Shape each half into a ball and place onto a well-greased baking sheet. Cover with a tightly woven towel and let rise until almost doubled, about 45 minutes.
  • About 10 minutes before baking, preheat oven to 375 degrees. Place a shallow pan on the bottom shelf of the oven. Just before baking, brush each loaf liberally with extra olive oil and cut a cross about 1/4-inch deep into the top. Place the bread in the oven and put 5 ice cubes into the pan on the bottom shelf. Close the door quickly to prevent steam from escaping. Bake for 25 minutes, or until the internal temperature of the loaves reaches 190 degrees. Immediately remove bread from baking sheet and cool on a rack.

Tips:

  • Choose the right potatoes: For best results, use Yukon Gold or Russet potatoes. These varieties hold their shape well and have a creamy texture that pairs perfectly with the breading and Parmesan cheese.
  • Cut the potatoes evenly: This will ensure that they cook evenly. Aim for 1-inch thick wedges or slices.
  • Soak the potatoes in water: This step helps to remove excess starch, which will prevent the potatoes from sticking together. Soak the potatoes in cold water for at least 30 minutes, or up to overnight.
  • Season the breading mixture: Don't just use salt and pepper! Add some garlic powder, onion powder, paprika, or your favorite herbs and spices to the breadcrumb mixture for extra flavor.
  • Use a generous amount of Parmesan cheese: Parmesan cheese is what makes these potatoes extra special. Don't be shy with it! Sprinkle it on top of the potatoes before baking, and then again after they're cooked.
  • Bake the potatoes until they're golden brown and crispy: This will take about 20-25 minutes. Keep an eye on them so they don't overcook.

Conclusion:

Breaded baked Parmesan potatoes are a delicious and easy side dish that's perfect for any occasion. They're crispy on the outside, tender on the inside, and packed with flavor. The best part is that they're so versatile! You can serve them with chicken, fish, steak, or even just a simple salad. So next time you're looking for a tasty and satisfying side dish, give these breaded baked Parmesan potatoes a try. You won't be disappointed!
