2 pounds firm, ripe Italian prune plums, pitted and quartered lengthwise

  • Preheat the oven to 400 degrees F.
  • Combine the flour, walnuts, and sugar in a large bowl. Add the butter and the egg yolk. Mix, either by hand or with an electric mixer, until crumbly.

2 pounds large plums, halved and pitted
6 tablespoons unsalted butter, diced
1 vanilla bean, split lengthwise and seeds scraped out
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 400 degrees F. Lay the pastry on a floured surface and cut in half. Sprinkle one piece with the almonds and some sugar; lay the other piece on top. Press together with a rolling pin to make a 6-by-14-inch rectangle. Score a 1-inch border with a knife. Pierce the middle with a fork and make small slits with a knife. Transfer to a baking sheet lined with parchment paper, brush with water and bake until golden, 20 to 25 minutes. Cool on a rack.
  • Stir 3/4 cup sugar, 2 tablespoons water and the lemon juice in a heavy pan. Cover and cook over medium-high heat just until the sugar melts. Uncover and cook, swirling the pan, until amber, about 5 minutes. Remove from the heat; add the plums, 3 tablespoons butter and the vanilla pod and seeds. Cook over low heat, tossing, until the plums are soft and the sauce thickens, about 20 minutes. Add the remaining 3 tablespoons butter and swirl to combine.
  • Transfer the crust to a platter. Top with the plums and half of the sauce. Serve with ice cream and the remaining sauce on the side.

The Times published Marian Burros's recipe for Plum Torte every September from 1983 until 1989, when the editors determined that enough was enough. The recipe was to be printed for the last time that year. "To counter anticipated protests," Ms. Burros wrote a few years later, "the recipe was printed in larger type than usual with a broken-line border around it to encourage clipping." It didn't help. The paper was flooded with angry letters. "The appearance of the recipe, like the torte itself, is bittersweet," wrote a reader in Tarrytown, N.Y. "Summer is leaving, fall is coming. That's what your annual recipe is all about. Don't be grumpy about it." We are not! And we pledge that every year, as summer gives way to fall, we will make sure that the recipe is easily available to one and all. The original 1983 recipe called for 1 cup sugar; the 1989 version reduced that to 3/4 cup. We give both options below. Here are five ways to adapt the torte.

  • In a bowl, combine the flour, sugar and salt; cut in the shortening until crumbly. Gradually add water, tossing with a fork until a ball forms. 350g plums, halved and destoned
175g white caster sugar
700ml brandy
½ cinnamon stick
1 star anise

Steps:

  • Make sure the plum halves are clean and dry, then put them in a large sterilised glass jar. Add the sugar, brandy, cinnamon stick and star anise. Seal and gently rotate the jar to help dissolve the sugar.
  • Continue to gently shake or rotate the jar (trying not to bash the fruit too much) every day for a week.
  • Once the sugar has dissolved, leave it in a cool dark cupboard for another 2 weeks to infuse.
  • Strain the mixture through a sieve lined with muslin, kitchen paper or coffee filter paper. Discard the plums, any fruit pulp and the spices, and pour the strained brandy into a bottle. Will keep for two months.

Crust:
2 cups/250g all purpose flour
9 tablespoons/125 g unsalted butter(cold)
1/2 cup/100g granulated sugar
1/4 teaspoon/2 g salt
Zest from 1 lemon
1 teaspoon vanilla extract
1 large egg
2-3 Tablespoons/30-45ml water or milk
Plums layer:
1 1/2 pounds/600g plums
1/4 cup/30g ground walnuts
Custard:
2 tablespoons/15g all purpose flour
2 tablespoons/20g/granulated sugar
1/4 teaspoon/2 g cinnamon
1/2 cup/100ml milk
1 large egg
4 tablespoons/50ml sour cream
2 tablespoons butter cut in small cubes(for the top of the tart)

Steps:

  • How To Make The Crust:
  • In a food processor: Mix flour, sugar and salt together and place in the food processor. Add cold butter cut into small cubes and pulse a few times until you obtain a mixture that resembles sand or bread crumbs. Do not overmix. Add lemon zest, vanilla extract, the egg and water, one tablespoon at a time pulsing a few times until the mixture holds together.
  • By hand: Mix flour, sugar and salt together, then cut the cold butter into small cubes and add it to the flour. Use a pastry tool to incorporate the butter into the flour, or use your fingertips. You should have a mixture that resembles sand or bread crumbs. Add lemon zest, vanilla extract, the egg and water, one tablespoon at a time until the mixture holds together.
  • Make the dough into a disk, wrap it and place it in the refrigerator for an hour.
  • Preheat oven to 350F/180C.
  • How To Make The Plum Layer:
  • Slice the plums in half and remove the stone, then cut each half into 4-5 slices. If you can't remove the stone, just carefully cut around it.
  • Set aside.
  • How To Make The Custard:
  • Mix flour, sugar and cinnamon together in a bowl. Separately beat together the egg with milk and sour cream. Pour the liquid over the flour mixture and mix well. Set aside.
  • How To Assemble The Plum Tart:
  • Butter the bottom of a 9 inch pie or tart pan.
  • Lightly dust your work surface with flour.
  • Roll out dough on floured board to a 12 inch size. This will fit in a 9 inch pan. Trim away excess.
  • Sprinkle walnuts on the dough.
  • Arrange the slices of plums in circle.
  • Pour over the plums the custard mixture. Add the little cubes of butter on top of the tart.
  • Bake for 40-45 minutes until the pastry is golden, the fruit tender and the custard set.

3 lbs purple plums (about 12)
1 cinnamon stick (about 1-inch)
2 cups sugar
1/4 teaspoon salt
2 cups brandy

Steps:

  • Boil a stockpot of water, as deep as the shoulder of a 2-quart jar with a hinged lid.
  • Wash and stem the plums and prick several holes around the stem ends.
  • Pack plums in the jar.
  • Quarter and pit and the plums that will not fit in the jar and then re-pack the jar, interspersing the whole plums with the plum quarters.
  • Add the cinnamon stick.
  • In a two quart saucepan, bring the sugar, salt and 1 cup of water to a boil, then turn to low and simmer for ten minutes, stirring occasionally.
  • Let the syrup cool for ten minutes, then stir in the brandy and immediately pour the liquid into the jar of plums, filling the jar up to a half inch from the rim.
  • Partly close the jar, leaving a gap for steam to escape and place the jar in the stockpot of boiling water for ten minutes.
  • Carefully remove the jar with a jar lifter or two pairs of tongs and close the lid tightly.
  • Cool to room temperature.
  • Refrigerate up to two weeks.

  • For crust:
  • Blend flour, sugar, and salt in processor. Add butter and cut in using on/off turns until mixture resembles coarse meal. Add 2 tablespoons ice water; blend until moist clumps form, adding more water by teaspoonfuls if mixture is dry. Gather dough into ball; flatten into disk. Wrap dough in plastic and refrigerate at least 1 hour.
  • For topping:
  • Preheat oven to 400°F. Toss plums, 4 tablespoons sugar, ginger and cinnamon in bowl. Roll out dough on floured surface to 12 1/2-inch round. Transfer to rimmed baking sheet. Mix 1 tablespoon sugar and 1 tablespoon flour in small bowl; sprinkle over dough, leaving 2-inch plain border. Arrange plums in concentric circles on dough, leaving 2-inch plain border; drizzle with melted butter. Fold dough border in toward center. Brush border with egg glaze; sprinkle with 1 tablespoon sugar. Bake tart until plums are tender and crust is golden, about 45 minutes.
  • Stir preserves in saucepan over low heat until melted. Brush over plums. Cool tart 1 hour on baking sheet. Run long thin knife under tart to loosen. Using 9-inch tart pan bottom, transfer tart to plate; serve at room temperature.

This tart, adapted from the pastry chef Jacquy Pfeiffer, with whom I wrote a cookbook, is a very simple way to show off the last of the season's plums. Use the same formula for peaches, apricots and figs when those fruits are in season. The important thing to remember when making fresh fruit tarts with cut stone fruit is that you need to pack the fruit into the pastry tightly. If you don't, the fruit will collapse in the shell as it bakes, and it will lose a lot of liquid, which could make the pastry shell soggy. Another way to prevent the shell from becoming soggy is to line it with crumbs of one kind or another - they can be cookie crumbs or breadcrumbs, crumble topping or streusel, that will absorb the juice from the fruit.

2 pounds/900 grams plums, pitted and cut in half if small Italian plums, cut into quarters if larger
1 cup/120 grams crumbled vanilla cookies, bread crumbs or crumble topping
3 tablespoons/45 grams sugar
1/2 teaspoon/1 gram cinnamon
1/4 to 1/2 cup apricot jam (optional)

Steps:

  • Heat oven to 375 degrees. If using smaller, halved plums, use a paring knife to cut a 3/4-inch slit through the top of each half, from the tip of the plum to just above where the pit should be. (This will allow the liquid from the plums to evaporate during baking instead of settling into the pit cavity.)
  • Place pastry shell on a sheet pan or baking sheet. Spread crumbs or crumble topping over bottom of pastry shell in an even layer. Arrange plums in tight concentric circles in pastry shell, skin-side down, beginning with rim of the pan and standing plums up slightly.
  • Mix together sugar and cinnamon and sprinkle 2 tablespoons over plums. Place in oven and bake 45 minutes, or until tips of plums have colored; plums should retain their shape. Remove from heat, on baking sheet, and allow to cool on a rack.
  • Once plums have cooled, sprinkle remaining cinnamon-sugar mixture over the fruit. Alternatively, heat jam in a small saucepan until runny and, instead of sprinkling fruit with sugar, gently brush cooled plums with jam to glaze.

Crust:
1 cup all-purpose flour
1 tablespoon sugar
1/8 teaspoon salt
1 stick (8 tablespoons) unsalted butter or pareve margarine, cut into 8 pieces
1 egg yolk
Filling:
3 tablespoons plum or other fruit jam
1 tablespoon brandy
1 1/2 pounds Italian blue plums
1/2 teaspoon ground cinnamon
1 teaspoon grated lemon zest
1/4 cup sugar

Steps:

  • To make the crust, pulse the flour, sugar, salt, and butter or margarine together in the bowl of a food processor fitted with a steel blade until crumbled. Then add the egg yolk, and pulse until the dough comes together.
  • Put the dough in the center of an ungreased 9-inch tart pan with a removable bottom. Dust your fingers with flour, and gently press out the dough to cover the bottom and sides of the pan. Refrigerate for at least 30 minutes.
  • Preheat the oven to 450 degrees, and bake the crust for 10 minutes. Reduce the oven to 375 degrees, and bake for another 5 minutes. Remove the crust from the oven, and let cool slightly. Reduce the oven temperature to 350 degrees.
  • Mix the jam with the brandy in a small bowl, and spread over the bottom of the crust. Pit the plums, and cut them into four pieces each. Starting at the outside, arrange the plums in a circle so that all the pieces overlap, creating concentric circles that wind into the center of the pan. Sprinkle with the cinnamon and lemon zest.
  • Return the tart to the oven, and bake for about 30 minutes, or until the crust is golden brown and the plums are juicy. Remove the tart from the oven, sprinkle on the sugar, and serve warm or at room temperature.
