This is a great side dish with tons of flavor, and easy to prepare. The smell is fantastic! (No crust to make) Great served with chicken on the spit and a tossed green salad. Sliced potatoes and onions cooked in sour cream and cheese of your choice. I hope you try this side dish! Enjoy!

2 pounds of russet potatoes, peeled and sliced very thin
1 medium size onion, peeled and cut in half, and sliced very thin
salt and pepper to taste (light on the pepper)
4 teaspoons of minced garlic
1 cup of grated cheese, divided
2/3 cup of sour cream, whipping cream, or milk (i use a combination of all three!)
1/4 cup parmesan grated fresh
pam spray

Steps:

  • 1. Cook's Tip: A word about cheese. I use jack cheese, fontina, gruyere cheese, cheddar, but I like fontina and jack cheese the best. For the milk mixture, I use a combination of sour cream, heavy cream and 2% milk, which is what I had on hand. You can use all milk, or all cream, or mix it up. Use what you like. Experiment to your hearts content. This is a fun recipe for that!
  • 2. Pre-heat the oven to 375 degrees. Spray a 10 inch glass pie dish with Pam.
  • 3. Scatter 2 teaspoons of garlic on bottom of Pam sprayed pie dish. Put half of the sliced potatoes on top of the garlic, overlapping the slices. Add half of the onion slices. Add salt and pepper (go easy on the pepper) Sprinkle 1/3 cup of cheese (your choice) over the onions evenly. Repeat the layer of garlic, potatoes, onions, and salt, pepper. Add the milk mixture evenly over the top, and then add the remaining 2/3 cup of cheese of choice, plus, the 1/4 cup of parmesan cheese.
  • 4. Cover the pie with foil and bake 30 minutes, uncover and bake 30 minutes more. You may want to do a low broil to brown the top. Cut into wedges to serve. Enjoy!

4 lbs potatoes, pared and very thinly sliced (8 cups)
2 large onions, thinly sliced (3 cups)
1/2 cup butter
1/2 cup freshly grated parmesan cheese
cayenne pepper, to taste
salt and pepper

Steps:

  • Preheat oven to 400°F.
  • In a buttered 13x9 inch baking dish, place 1/3 of the potatoes and 1/3 of the onions; sprinkle with salt and pepper and dot with 1/3 of the butter.
  • Do this twice more.
  • Cover and bake for 45 minutes or until tender.
  • Uncover and bake until top is lightly browned.
  • Remove from oven, let cool for 5 minutes.
  • Loosen around edge and invert on a heat-proof platter.
  • Sprinkle cheese and cayenne on top and return to oven to brown cheese.

6 to 8 medium onions, thinly sliced
2 tablespoons canola oil
6 large eggs
1 cup soft bread crumbs
1/2 cup grated Parmesan cheese

6 large potatoes (3 pounds)
1 (10 ounce) package pie crust mix
6 ounces cheddar cheese (grated)
3 tablespoons all-purpose flour
1 large onion, slice
1 -2 cup leftover ham, pieces (cubed)
2 garlic cloves, minced
1 1/4 teaspoons salt
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
1 cup milk
1 tablespoon butter or 1 tablespoon margarine
1 egg yolk
1/2 cup half-and-half cream

Steps:

  • Scrub potatoes, pare and slice very thin.
  • Put potatoes in a large glass bowl and cover with cold water; set aside.
  • Prepare pie crust mix according to package directions; wrap in plastic and set aside.
  • Using a food processor or food grater, coarsely grate Cheddar cheese. Put in a small bowl; add flour and toss to mix well.
  • Preheat oven to 350°F.
  • Lightly grease a shallow two quart oval, round or rectangular baking dish.
  • Drain potatoes thoroughly; pat dry with paper towels. Alternately layer potatoes with sliced onion, ham and cheese-flour mixture, sprinkling with garlic, salt, pepper and nutmeg as you layer.
  • Pour on milk; dot with butter and set aside.
  • On a lightly floured surface, roll pastry out to a 15 x 11 inch rectangle, or a 13 inch circle, depending on the size and shape of your baking dish. Gently lift pastry and place on baking dish to cover potato mixture completely.
  • Turn edges of pastry under and flute decoratively with your fingers. Cut four gashes in pastry to allow steam to escape while baking.
  • Mix egg yolk with one tablespoon of the half and half cream; brush over the pastry to glaze.
  • Bake 60 minutes or until pstry is golden brown and potatoes are done.
  • Remove from oven; pour remaining half and half cream through the vents in the top of the pastry. Let stand 15 minutes before serving.

1 lb honey-roasted ham, cut in small cubes
1 -2 tablespoon olive oil
2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk (for non-dairy use 1 1/2 c. rice dream rice milk)
salt
pepper
chives
dried basil
4 medium potatoes, peeled and sliced paper thin
1/2 cup chopped onion

Steps:

  • Pan fry ham and chopped onion in olive oil until onions are lightly browned.
  • While onions and ham are cooking, peel potatoes and slice paper thin.
  • Butter a medium casserole dish and place sauteed ham and onion inside.
  • Salt and pepper the ham and onions.
  • preheat oven at 325 degrees.
  • Melt butter in a sauce pan, remove from heat and blend in flour. Return to heat and add milk or rice dream rice milk. Stir over direct heat until sauce boils and thickens.

  • Sprinkle potatoes with chives and basil flakes.
  • Bake at 325 degrees until potatoes are tender, about 1 hour. Cover for first 1/2 hour then remove cover.
