Time 1h15m

Yield 8

Number Of Ingredients 10

2 (9 inch) prepared pie crusts
3 eggs, slightly beaten
1 ¾ cups white sugar
4 tablespoons all-purpose flour
3 tablespoons cornstarch
2 tablespoons milk
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon
¼ teaspoon salt
3 cups fresh blueberries

Steps:

  • Preheat the oven to 410 degrees F (210 degrees C). Line a pie plate with 1 pie crust.
  • Beat eggs slightly in a large bowl. Mix in sugar, flour, cornstarch, milk, nutmeg, cinnamon, and salt. Add blueberries; stir to combine. Pour blueberry mixture over the bottom crust.
  • Roll the top crust into a 10-inch circle. Cut into 1/2-inch strips with a sharp paring knife or pastry wheel. Moisten the rim of the pie with a small amount of water. Start with the longest strips and lay the first 2 in an X in the center of the pie. Alternate horizontal and vertical strips, weaving them in an over-and-under pattern. Use the shortest strips for the edges of the lattice. Fold the ends of the lattice strips under the edge of the bottom crust and flute the crust.
  • Bake in the preheated oven until center is set, about 50 minutes.

Categories     Sauces

Time 25m

Yield 6 serving(s)

Number Of Ingredients 11

4 tablespoons cornstarch
4 tablespoons water
1/2 cup blueberries, more if needed (if using frozen, thaw first)
1/4 cup whole blueberries (no need to thaw, if using frozen)
1/2 cup port wine
1 tablespoon chopped shallot
2 tablespoons white sugar
6 tablespoons prepared Dijon mustard
2 tablespoons prepared whole grain mustard
1 tablespoon yellow mustard seeds
1 tablespoon white wine

Steps:

  • Combine the tbsp of mustard seeds with the tbsp of white wine and set aside.
  • Whisk together the cornstarch and water; set aside.
  • Press the half-cup of blueberries through a sieve-- you want a yield of 1/2-cup sieved berries so you may need another tbsp or two of blueberries to get that.
  • In a saucepan, place the sieved berries, the whole blueberries, port wine, shallots and sugar; whisk in the cornstarch mixture.
  • Over medium-high heat, bring to a simmer, then let it cool.
  • Whisk in the mustards and softened mustard seeds well, then refrigerate until needed.

Tips:

  • For the best flavor, use fresh blueberries. If using frozen blueberries, thaw them completely before using.
  • If you don't have Dijon mustard, you can substitute yellow mustard. However, Dijon mustard has a sharper flavor that pairs well with the sweetness of the blueberries.
  • If you like a sweeter mustard, you can add a little honey or maple syrup to taste.
  • This mustard is also great with chicken, pork, or fish.
  • Store the mustard in a jar or container in the refrigerator for up to 2 weeks.

Conclusion:

Blueberry mustard is a delicious and versatile condiment that can be used on a variety of dishes. It's easy to make and can be tailored to your own taste. Whether you like it sweet, spicy, or somewhere in between, you're sure to find a blueberry mustard recipe that you'll love.
