Time 45m

Yield 6 servings

Number Of Ingredients 15

2 15-ounce cans seasoned black beans
1 c. seasoned breadcrumbs
1 small zucchini, coarsely grated (about 1 cup)
1 medium carrot, coarsely grated (about 1/2 cup)
1/4 white onion, coarsely grated (about 1/4 cup)
1 large egg
2 tbsp. chopped canned chipotle chiles in adobo sauce
1 tsp. kosher salt, plus more to taste
Black pepper, to taste
2 ripe avocados
Juice of 1 lime
3 tbsp. vegetable oil
6 slices muenster cheese
6 onion rolls, split and toasted
Sliced tomato and pickled jalapeños, for topping

Steps:

  • Drain the beans but do not rinse them. Place them in a bowl and use a fork to mash them until they're mostly broken up but still have some whole beans visible. Add the breadcrumbs, zucchini, carrot, onion, egg, chipotles, 1 teaspoon salt and a few grinds of pepper. Stir until everything is combined, then let the mixture sit for 5 minutes.
  • Meanwhile, peel and pit the avocados and scoop the flesh into a small bowl. Add the lime juice, season with salt and pepper and mash with a fork, leaving the mash slightly chunky.
  • Form the bean mixture into six 1-inch-thick patties (about 4 inches wide). Heat the vegetable oil in a large cast-iron skillet over medium-high heat. Working in two batches, cook the patties until browned and crisp on the bottom, about 5 minutes. Flip the patties, top each with a slice of cheese and cook until the other side is browned and crisp, 4 to 5 more minutes.
  • Spread the avocado mash on the rolls. Serve the burgers on the rolls with tomato and pickled jalapeños.

Time 2h40m

Number Of Ingredients 14

3 1/2 tbsp light mayonnaise (Hellman's)
1 tbsp canned chipotle in adobo sauce
16 oz can black beans (rinsed and drained)
1/2 red bell pepper (cut into 2 inch pieces)
1/2 cup chopped scallions
3 tbsp chopped cilantro
3 cloves garlic (peeled)
1 jumbo egg
1 tbsp cumin
1/4 to 1/2 tsp kosher salt
1 tsp hot sauce
1/2 cup quick oats (use gf oats for gluten free)
4 whole wheat 100 calorie buns (Martin's*)
1 small hass avocado (sliced thin)

Steps:

  • Combine mayonnaise and chipotle, set aside.
  • Dry the beans well after washing, extra moisture will keep the burgers from sticking.
  • In a medium bowl, mash beans with a fork until thick and pasty.
  • In a food processor, finely chop bell pepper, cilantro, onion, and garlic, then add oats, then eggs and spices.
  • Then stir into mashed beans.
  • Divide mixture into four patties (using slightly oiled hands helps) and place them onto a flat surface covered with wax paper. (If it's too wet, chill the mixture 30 minutes in the refrigerator or add another tablespoon of oats)
  • Freeze at least 2 hours before cooking or keep frozen until ready to cook.
  • Heat a lightly sprayed skillet to medium heat and cook frozen burgers about 7 minutes on each side.
  • If grilling, preheat grill over medium heat, and lightly oil a sheet of aluminum foil; grill 7-8 minutes on each side or you can bake in the oven at 375° on a lightly oiled baking sheet.

2 cups black beans, drained and mashed with a fork
1 cup seasoned breadcrumbs
1/4 cup grated onions
1/2 teaspoon chili powder
1 egg
Salt and freshly ground black pepper
Canola oil, for oiling grill pan
1 to 2 kaiser rolls
Arugula, for serving
Sliced tomatoes, for serving
Mayonnaise, for serving

Steps:

  • Mix together the beans, breadcrumbs, onions, chili powder, egg and some salt and pepper in a medium bowl. Form the mixture into 1 big (or 2 smaller) patties.

Tips:

  • For the perfect burger patty: Use a combination of black beans and oats to create a hearty and flavorful patty. Season the mixture well with spices like cumin, chili powder, and garlic powder. Shape the patties firmly and cook them over medium heat until crispy on the outside and tender on the inside.
  • Make the chipotle slaw ahead of time: This allows the flavors to meld and develop. The slaw can be stored in the refrigerator for up to 3 days.
  • Serve the burgers on your favorite bun: Whole-wheat buns, potato buns, or even lettuce wraps are all great options.
  • Top the burgers with your favorite toppings: Try avocado, tomato, onion, cheese, or bacon.
  • Serve the burgers with a side of your favorite fries or salad: Sweet potato fries, regular fries, or a simple green salad are all great choices.

Conclusion:

These black bean burgers with chipotle slaw are a delicious and satisfying meal that is perfect for a summer cookout or a quick weeknight dinner. The burgers are packed with flavor and the slaw is a refreshing and tangy complement.
