Time 30m

Yield 4 to 6 servings

Number Of Ingredients 15

2 tablespoons vegetable oil
1 large onion, diced
2 cloves garlic, minced
1 tablespoon chili powder
1/2 teaspoon smoked paprika
Pinch crushed red pepper flakes, optional
Kosher salt and freshly ground black pepper
1 pound ground beef, 80/20
2 tablespoons tomato paste
1 tablespoon Dijon mustard
5 cups low-sodium chicken stock or broth
10 ounces elbow macaroni
2 cups shredded Cheddar, about 8 ounces
4 ounces cream cheese
1 cup flat-leaf parsley leaves and tender stems, chopped, plus more for garnish, optional

Steps:

  • Heat the oil in a large pot over medium-high heat. Add the onion and cook, stirring occasionally, until softened 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the chili powder, smoked paprika, red pepper flakes (if using), 1 teaspoon salt and a few grinds of black pepper and stir to combine. Add the beef and break it up into small pieces with a large spoon; cook, stirring occasionally, until beef is cooked through and no longer pink in the center, 6 to 7 minutes. Stir in the tomato paste and Dijon until combined. Pour in the chicken stock and 1 teaspoon salt, stir to combine and bring to a boil, 6 to 7 minutes. Add the elbow macaroni and cook, stirring occasionally, until the sauce has thickened and the pasta is al dente, 9 to 11 minutes. Remove from the heat and stir in the Cheddar and cream cheese until smooth. Fold in the parsley. Garnish with more parsley, if desired.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the mac and cheese will be. Use a good quality cheddar cheese that melts well, such as sharp cheddar or extra sharp cheddar. You can also use a combination of cheeses, such as cheddar and Parmesan, for a more complex flavor.
  • Cook the macaroni al dente: This means that the macaroni should be cooked until it is just tender, but still has a slight bite to it. Overcooked macaroni will be mushy and will not hold its shape well in the mac and cheese.
  • Make a roux: A roux is a mixture of butter and flour that is used to thicken the sauce. It helps to create a smooth and creamy sauce that coats the macaroni evenly. To make a roux, melt the butter in a saucepan over medium heat. Then, whisk in the flour and cook for 1-2 minutes, or until the mixture is golden brown.
  • Use milk or cream: Milk or cream is used to thin out the sauce and make it more creamy. You can use whole milk, skim milk, or even heavy cream. The type of milk or cream you use will affect the richness and flavor of the mac and cheese.
  • Season the sauce: Salt, pepper, and garlic powder are all classic seasonings for mac and cheese. You can also add other spices, such as paprika, cayenne pepper, or onion powder, to taste.
  • Add cheese: Once the sauce is cooked, stir in the grated cheese until it is melted and smooth. You can use a variety of cheeses, such as cheddar, Parmesan, mozzarella, or Gruyère.
  • Top with breadcrumbs: Breadcrumbs add a nice crunchy texture to mac and cheese. You can use plain breadcrumbs or seasoned breadcrumbs. To make seasoned breadcrumbs, mix together breadcrumbs, melted butter, and dried herbs, such as parsley, thyme, or rosemary.

Conclusion:

One-pot cheese and macaroni is a quick and easy meal that is perfect for busy weeknights. It is a versatile dish that can be customized to your liking. You can add different cheeses, vegetables, or proteins. You can also adjust the seasonings to taste. One-pot cheese and macaroni is a comfort food that is sure to please everyone at the table.
