2 ⅔ cups sifted cake flour
2 teaspoons baking powder
¾ cup butter, softened
1 ¼ cups white sugar
4 eggs
1 tablespoon vanilla extract
1 cup milk

  • In a large bowl, beat the butter and sugar until light and fluffy, up to 10 minutes. Mix in eggs one at a time, fully blending each one in before adding the next. Stir in vanilla. Stir in the flour and baking powder, alternating with the milk until the batter is smooth. Divide the batter evenly between the prepared pans. Tap the bottoms of the pans on the counter a few times to remove air bubbles.

HIGH-ALTITUDE CHOCOLATE CAKE

High-Altitude Chocolate Cake image

This moist chocolate cake never collapses, something I can't say for other cakes I've baked at high altitude! This cake has been tested at 9,000 feet and always turns out fluffy and moist! Frost this delicious layer cake with cream cheese vanilla bean frosting. Bailey's® buttercream or mocha frosting are also great choices.

Tips for Making a Perfect High-Altitude Birthday Cake:

- **Flour Adjustment:** At high altitudes, the lower air pressure causes baked goods to rise more, so you'll need to reduce the amount of flour in your recipe. A good rule of thumb is to decrease the flour by about 1/4 cup for every 1,000 feet above sea level. - **Baking Powder and Soda:** High altitudes also affect the leavening agents in your cake, so you'll need to increase the amount of baking powder and baking soda. This will help your cake rise properly and prevent it from becoming dense. - **Eggs:** Eggs are another important ingredient in cakes, and they can also be affected by high altitudes. At high altitudes, eggs tend to produce more foam, which can make your cake too light and airy. To prevent this, you can reduce the number of eggs in your recipe or use a smaller egg size. - **Sugar:** Sugar helps to tenderize cakes and provides moisture, so it's important to use the right amount. At high altitudes, you may need to increase the amount of sugar in your recipe to compensate for the lower air pressure. - **Baking Time and Temperature:** High altitudes also affect the baking time and temperature of your cake. Cakes tend to bake faster at high altitudes, so you'll need to reduce the baking time by about 5-10 minutes. You may also need to reduce the baking temperature by 25-50 degrees Fahrenheit. - **Cooling:** Once your cake is baked, it's important to let it cool completely before frosting it. This will help to prevent the frosting from melting and sliding off the cake.

Conclusion:

Baking a cake at high altitudes can be a challenge, but it's definitely possible to achieve a delicious and moist cake with the right adjustments. By following the tips above, you can ensure that your high-altitude birthday cake is a success!
