THE BEST BANANA PUDDING

The Best Banana Pudding image

This creamy banana dessert is our very favorite version, piled high with layers of just-ripe bananas, rich vanilla pudding and tender cookies. We used vanilla bean paste instead of extract in our homemade filling for a bold flavor boost and topped the pudding with swirls of freshly whipped cream. When it all comes together, it's dreamy, luscious and feeds a crowd!

Time 3h10m

Yield 12 servings

Number Of Ingredients 11

6 cups whole milk
1 1/3 cups granulated sugar
2/3 cup cornstarch
12 large egg yolks
1 tablespoon vanilla bean paste
1 1/2 teaspoons kosher salt
4 tablespoons cold unsalted butter, cut into cubes
114 vanilla wafer cookies, such as Nilla Wafers (from two 15-ounce boxes), plus 5 cookies, crushed
12 medium-ripe bananas, sliced about 1/4 inch thick
3/4 cup cold heavy cream
2 tablespoons confectioners' sugar

Steps:

  • Bring the milk to a simmer in a large saucepan over medium heat, then remove from the heat. Meanwhile, whisk the sugar, cornstarch, egg yolks, vanilla paste and salt together in a medium bowl.
  • While whisking, slowly add about 1 cup of the warm milk to the egg mixture. Pour the egg mixture back into the saucepan, whisking constantly. Continue to cook over medium heat, whisking constantly, until the mixture comes to a boil. Lower the heat to maintain a simmer and cook until thickened, 3 to 5 minutes. Remove from the heat and whisk in the butter.
  • Transfer the pudding to a large bowl and press a piece of plastic wrap directly against the surface. Refrigerate until cold, about 1 hour.
  • Arrange 19 wafer cookies in the bottom of a 4-quart trifle dish. Top with 1 cup pudding, then arrange 2 sliced bananas on top. Repeat the layers ending with bananas.
  • Add the heavy cream, confectioners' sugar and a pinch of salt to the bowl of a stand mixer fitted with a whisk attachment. Beat on medium-high speed until stiff peaks form, about 2 minutes.
  • Spread the whipped cream over the pudding and sprinkle the crushed wafer cookies around the border. Refrigerate until the pudding is firm, at least 2 hours or up to overnight.

Time 15m

Yield 10 serving(s)

Number Of Ingredients 5

10 ripe bananas
1 (16 ounce) box vanilla wafers (sometimes i use more)
12 ounces eagle brand sweetened condensed milk
12 ounces Cool Whip, thawed
1 (6 ounce) package instant vanilla pudding (Large Size)

Steps:

  • Mix pudding according to package directions.
  • let stand while you slice the bananas. I use an egg slicer to get nice even slices, not to mention it goes so much faster.
  • add sweet condensed milk to pudding mixture and mix very well.
  • add cool whip and mix well.
  • Layer wafers, sliced bananas then pudding in a punch bowl. I usually get 3-4 layers but it depends on how thick you make them, its totally up to you.
  • Let stand overnight or at least 4-6 hours so it really gets that banana flavor.
  • You can use more or less wafers depending on your taste and i always add the top layer just before serving so that they are still crisp. You can get creative with the wafers and really make a nice presentation.

BEST EVER BANANA PUDDING

This is totally different from "Southern" banana pudding that needs to be baked and has meringue on it. This is not baked! We've been making it for years, and it's always a hit!

Categories     Other Desserts

Time 1h

Number Of Ingredients 9

1 pkg cream cheese (8-oz. block)
1 pt whipping cream
1 can(s) sweetened condensed milk (14-oz)
1/2 box instant french vanilla or vanilla pudding mix (small box)
1/2 box instant banana or banana cream pudding mix (small box)
1 pinch pure vanilla extract
5 ripe bananas
1/2 box vanilla wafers
1 container of cool whip

Steps:

  • 1. Soften cream cheese block to room temperature. In large mixing bowl, beat cream cheese with condensed milk. Add pinch of vanilla, and instant pudding mixes. Set aside.
  • 2. Slice bananas thinly, and drizzle with lemon juice to keep from turning brown.
  • 3. In a small chilled bowl, beat whipping cream on high speed with sugar, until stiff peaks start to form. If you can't chill your bowl, put the carton of whipping cream in the freezer for about 10 minutes before this step.
  • 4. Stir bananas into pudding mixture. Fold whipped cream into pudding.
  • 5. In large serving bowl, put a layer of whole vanilla wafers on bottom. Add a layer of pudding. Crumble some vanilla wafers on top of pudding, and add whole wafers around the edges of the bowl, if desired. Continue pudding & wafer layers until pudding is gone. Add Cool Whip to the top. Chill & serve.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your banana pudding will be.
  • Don't overmix the pudding: Overmixing will make the pudding tough. Stir just until the ingredients are well combined.
  • Chill the pudding before serving: This will help it to set and firm up.
  • Garnish with whipped cream and Nilla wafers: This is a classic combination that adds a delicious finishing touch to banana pudding.
  • Get creative with your toppings: You can also top banana pudding with other fruits, nuts, or even chocolate chips.

Conclusion:

Banana pudding is a delicious and easy-to-make dessert that is perfect for any occasion. With so many different variations, there's sure to be a recipe that everyone will enjoy. So next time you're looking for a sweet treat, give banana pudding a try!
