BBQ MEATLOAF

Provided by Wanna Make This?

Categories     main-dish

Time 2h

Yield 6 to 8 servings

Number Of Ingredients 14

4 ounces thick-cut bacon (about 3 slices), cut into 1/2-inch-thick pieces
1 medium yellow onion, finely chopped (about 1 1/2 cups)
3 cloves garlic, minced
1 pound prepared BBQ ribs, bones removed, meat finely chopped (about 2 cups)
1 cup prepared pulled pork in BBQ sauce
1 pound 80/20 ground beef
2 large eggs
1/2 cup plain breadcrumbs
2 teaspoons mustard powder
1 1/2 teaspoons smoked paprika
1 teaspoon dried basil
1 teaspoon dried thyme
Kosher salt and freshly ground black pepper
1/2 cup prepared BBQ sauce, plus more for serving

Steps:

  • Position a rack in the center of the oven and preheat to 325 degrees F. Line a large baking sheet with parchment paper.
  • Put the bacon in a large saute pan and cook over medium heat until most of the fat has rendered and the bacon is crispy, about 10 minutes, stirring occasionally. Use a slotted spoon to remove the bacon to a large bowl. Increase the heat slightly (between medium and medium-high) and add the onions to the bacon fat in the pan and cook until tender, about 5 minutes, stirring occasionally. Add the garlic and cook until tender, about 1 minute, stirring constantly. Transfer to the bowl with the bacon. Stir in the chopped ribs and pulled pork. Cool completely.
  • Add the beef, eggs, breadcrumbs, mustard powder, smoked paprika, basil, thyme, 1 to 1 1/2 teaspoons salt (depending on how salty the ribs and pulled pork are) and several heavy grinds of pepper. Use your hands to mix until well combined. Form into a 9-by-3 1/2-inch loaf that is about 2 inches tall on the prepared baking sheet. Spread 1/4 cup of the BBQ sauce evenly over the top of the meatloaf.
  • Bake for 30 minutes, and then spread the remaining 1/4 cup BBQ sauce on top of the partially cooked meatloaf. Continue to bake until a thermometer inserted into the center of the meatloaf registers 160 degrees F, about 45 more minutes.
  • Serve with additional warm BBQ sauce alongside.

BACON WRAPPED BBQ MEATLOAF STUFFED WITH CHEESE!

Bacon Wrapped BBQ Meatloaf Stuffed with Cheese! image

Well, this certainly isn't a boring meatloaf. There are so many layers of goodness and it's full of flavor. Really, anything wrapped in bacon is just on a whole other level. The cheese in the middle is an ooey, gooey surprise. Double the recipe if you're serving a family. After one bite I am not sure your family will ever want...

Categories     Meatloafs

Time 1h15m

Number Of Ingredients 20

MEATLOAF
1 lb ground beef
1 egg
2 Tbsp bbq sauce (your favorite, I used Jack Daniels original)
1/4 c dry seasoned bread crumbs
1 1/2 tsp Parmesan cheese, grated
1/2 tsp garlic powder
1/8 tsp sea salt, optional
2 clove garlic zested or minced
1/4 tsp rounded, dry mustard
1/4 tsp rounded, oregano
1/4 tsp rounded, basil
1/4 tsp rounded, black pepper fresh ground
2-3 green onions, white and green part, chopped finely
1/2 small green bell pepper, small dice
1 c shredded sharp cheddar cheese (reserve 1/4c for on top)
TOPPING
3 slice bacon cut in half (6 smaller slices total)
2 Tbsp bbq sauce
1 Tbsp rounded, light brown sugar not packed

Steps:

  • 1. Preheat oven to 375° F. Get out a 9x13 baking pan. Do not use a bread pan. You can line this with foil to help with clean up, or just spray with a non-stick spray. Set aside.
  • 2. Keep hamburger in the refrigerator until the last minute. In a bowl, combine the bread crumbs, Parmesan cheese, garlic powder, salt, minced garlic, dry mustard, oregano, basil, pepper, onion and bell pepper. Stir it around a bit to get everything mixed. Add the 2 tsp bbq sauce and egg; mix. Grab the rest of the ingredients... this will go quickly so the "loaf" holds its shape.
  • 3. Take the hamburger and add this to the bowl, QUICKLY mix together with clean hands... forget the spoon. Place 1/2 of the hamburger mix in the center of your pan. Make a "well" with your hand so it looks like a hollowed out 1/2 potato. Add 3/4 cup of the cheese and gently press it in.
  • 4. Add the second half of the hamburger on top and press it together and shape like a log.
  • 5. Lay the bacon strips on top of the loaf.
  • 6. Smear the last 2 tbsp of bbq sauce on top of the bacon. Sprinkle brown sugar on top of the sauce and put this into the oven for 60 minutes. (temp should be 160°F internally)
  • 7. After 60 minutes, you can sprinkle the remaining 1/4 c cheese on top and return it to the oven for 5 minutes, just to let the cheese melt. If you don't want to to this, you can just stuff all the cheese inside and leave the outside to the bacon and bbq sauce.

HEALTHY GRILLED BBQ MEATLOAF FOIL PACK

Healthy Grilled BBQ Meatloaf Foil Pack image

What makes this low-fat meatloaf speedier than the typical oven version? The reflective surface of the foil packet, which traps and intensifies the heat like a mini silver oven. Plus the loaf is slightly thinner, so it cooks more quickly while maintaining a flavorful char on the surface.

Provided by Food Network Kitchen

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 12

1/4 cup 2-percent milk
1 large egg
3 tablespoons whole-wheat breadcrumbs
1 tablespoon Worcestershire sauce
4 tablespoons barbecue sauce
2 cups baby spinach
2 scallions, trimmed
1 large clove garlic
12 ounces lean ground beef
8 ounces 99-percent fat-free ground turkey
Kosher salt and freshly ground black pepper
Nonstick cooking spray

Steps:

  • Prepare a grill for medium-high heat.
  • Stir together the milk, egg, breadcrumbs, Worcestershire sauce and 1 tablespoon of the barbecue sauce in a medium bowl.
  • Finely chop the spinach, scallion and garlic together on a cutting board. Transfer to the bowl, along with the ground beef and turkey, 1 teaspoon salt and several grinds of black pepper. Gently combine the mixture well with your hands.
  • Coat a 20-inch piece of heavy duty aluminum foil all over with cooking spray. Pile the meatloaf mixture onto the foil just off the center and form into a 9-by-5-inch loaf that's about 1-inch thick. Fold the long half of the foil over the meatloaf, lining up the edges, and crimp and fold tightly to make a sealed packet.
  • Put the packet on the grill, close the grill lid and cook for 10 minutes. Turn the packet over using 2 large metal spatulas; cover and grill 10 minutes more. Remove and let rest for 5 minutes. Carefully open the packet (hot steam will escape). The meatloaf should have some grill marks and an internal temperature of 165 degrees F. Brush the top and sides of the loaf with the remaining 3 tablespoons barbecue sauce. Cut into slices and serve.

BBQ CHEDDAR MINI MEATLOAF "MUFFINS"

BBQ Cheddar Mini Meatloaf

I've always loved meatloaf- but never could find the right recipe. I especially hate all the fat left in the pan after a regular loaf is baked. This recipe is easy, absolutely delicious, and since you have 12 small "muffins" instead of 1 large loaf, there is not a lot of fat left in the bottom of the tin. If you don't want to stray from traditional meatloaf- go ahead and use ketchup instead- but I recommend trying the BBQ at least once- my family loves it! Also great for potlucks since everyone can have their own individual muffin!

Provided by Isaacs Mama

Categories     Meat

Time 35m

Yield 12 muffins, 6 serving(s)

Number Of Ingredients 6

1 lb ground beef
0.5 (3 ounce) package Stove Top stuffing mix (i use chicken)
1/2 cup water
1 egg
3/4 cup barbecue sauce (divided)
1/2 cup shredded cheddar cheese

Steps:

  • Preheat oven to 400 degrees. Place all ingredients in gallon zip-loc bag (except 1/4 cup of cheese & BBQ sauce). Squeeze until just mixed. (This keeps the mess out of preparing meatloaf!) Spoon mixture into a 12 cup muffin tin and press down firmly with back of spoon. Top with remaining BBQ sauce and place in oven for 25-35 minutes. Sprinkle remaining cheese on each muffin and bake additional 5 minutes. Allow to cool 5 minutes before removing from tins.

BBQ-BACON MEATLOAF

BBQ-Bacon Meatloaf image

I have to admit that a regular meatloaf doesn't really appeal to me that much. So when someone in my family requested meatloaf, I decided to try something different! I made it a few times before I actually wrote the recipe down. This is a hit with my family every time and my sister requests it frequently. It's moist, flavorful, juicy, and really good as a leftover if you slice it and fry it. It's hard to go wrong with bacon and cheese! Hope you enjoy it as much as we do!

Provided by lovetocook

Time 1h40m

Yield 8

Number Of Ingredients 11

4 slices uncooked bacon
cooking spray
2 pounds ground beef
1 cup milk
1 cup uncooked quick oats
1 cup shredded Colby-Jack cheese
1 cup finely chopped onion
1 cup barbecue sauce, divided

  • Meanwhile, preheat the oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish with cooking spray.
  • Combine ground beef, milk, oats, Colby-Jack cheese, onion, 1/2 cup barbecue sauce, eggs, garlic pepper, and salt in a mixing bowl.

1/4 cup of your favorite salsa
1 egg

  • Mix together the meat, crushed crackers salsa and egg. Cut the mixture into two parts. I generally make one part a little bit bigger then the second.

My family loves this meatloaf recipe; they beg me to make it. I needed to find a healthy recipe to serve my family because of high cholesterol and diabetes. It isn't dry, it's moist.

HEALTHY GRILLED BBQ MEATLOAF FOIL PACK RECIPE

Healthy Grilled BBQ Meatloaf Foil Pack Recipe image

Provided by á-7737

Number Of Ingredients 12

1/4 cup 2-percent milk
1 large egg
3 tablespoons whole-wheat breadcrumbs
1 tablespoon Worcestershire sauce
4 tablespoons barbecue sauce
2 cups baby spinach
2 scallions, trimmed
1 large clove garlic
12 ounces lean ground beef
8 ounces 99-percent fat-free ground turkey
Kosher salt and freshly ground black pepper
Nonstick cooking spray

Steps:

  • Prepare a grill for medium-high heat. 2 Stir together the milk, egg, breadcrumbs, Worcestershire sauce and 1 tablespoon of the barbecue sauce in a medium bowl. 3 Finely chop the spinach, scallion and garlic together on a cutting board. Transfer to the bowl, along with the ground beef and turkey, 1 teaspoon salt and several grinds of black pepper. Gently combine the mixture well with your hands. 4 Coat a 20-inch piece of heavy duty aluminum foil all over with cooking spray. Pile the meatloaf mixture onto the foil just off the center and form into a 9-by-5-inch loaf that's about 1-inch thick. Fold the long half of the foil over the meatloaf, lining up the edges, and crimp and fold tightly to make a sealed packet. 5 Put the packet on the grill, close the grill lid and cook for 10 minutes.

Tips:

  • Choose the right ground beef. An 80/20 blend of ground beef is ideal for meatloaf, as it has enough fat to keep the meat moist and flavorful, but not so much that it becomes greasy.
  • Don't overmix the meatloaf. Overmixing the meatloaf will make it tough. Mix the ingredients just until they are combined.
  • Use a loaf pan that is the right size. A 9x5-inch loaf pan is the perfect size for a 2-pound meatloaf.
  • Preheat your oven to the correct temperature. The oven should be preheated to 350 degrees Fahrenheit before you put the meatloaf in.
  • Cook the meatloaf until it is cooked through. The meatloaf is cooked through when it reaches an internal temperature of 160 degrees Fahrenheit.
  • Let the meatloaf rest before slicing. Let the meatloaf rest for 10-15 minutes before slicing, so that the juices can redistribute.

Conclusion:

BBQ meatloaf is a delicious and easy-to-make dish that is perfect for a summer cookout. By following these tips, you can make a moist, flavorful, and perfectly cooked BBQ meatloaf that your family and friends will love.
