BANANAS FOSTER

Bananas Foster image

The New York Times food editor Jane Nickerson first published this recipe in 1957 as part of an article on New Orleans-style Creole cooking. Adapted from Brennan's restaurant, this recipe is meant to be a showstopper. But it's deceptively easy. Be sure to have a lid at the ready to extinguish the flame in case things get out of hand. If you cannot find banana liqueur, just add a teaspoon more rum.

Tips:

  • To achieve the perfect caramelization of the bananas, use ripe bananas. Overripe bananas will turn mushy, while underripe bananas will not caramelize properly.
  • For a richer flavor, use dark brown sugar instead of light brown sugar. You can also add a tablespoon of molasses or honey for an extra layer of sweetness.
  • If you don't have a kitchen torch, you can caramelize the bananas under the broiler. Just keep a close eye on them to prevent burning.
  • Serve the Bananas Foster Crisp immediately after baking. The crisp topping will soften as it cools, so it's best enjoyed warm and fresh out of the oven.

Conclusion:

The Bananas Foster Crisp is a delicious and easy-to-make dessert that is perfect for any occasion. The combination of caramelized bananas, creamy custard, and crispy topping is sure to please everyone at the table. With its simple ingredients and straightforward instructions, this recipe is a great choice for beginner bakers or anyone looking for a quick and tasty dessert.
