PLAIN BAKED WHOLE YAMS

PLAIN BAKED WHOLE YAMS image

Categories     Vegetable     Dessert     Bake     Quick & Easy     High Fiber     Wheat/Gluten-Free     Healthy

Number Of Ingredients 2

Jewel yams
from 6 to 11 oz each.

Steps:

  • Preheat oven to 425 Farenheit. (Test oven temperature with thermometer to make sure your oven thermostat is correct.) Scrub yams with veggie brush under running cold water. This will abrade the skin enough so you don't have to make slits in them. Place in stainless pan large enough so yams fit comfortably without crowding. It's OK if they touch. Bake for 1 ½ hours. Yams are done when the flesh has pulled away from the skin and a knife goes in very easily. The skin will look somewhat charred, but the yams will not taste burned. Turn off oven and let yams sit in oven until room temperature. If that's not practical let them sit on the counter till cool. Refrigerate in their skins several hours or overnight, till cold, in a covered glass container. Peel, slice, and serve as a side dish, dessert, or snack. They are also good warm but really come into their own when chilled. If serving warm you can add a little orange juice if you like, but when eating them cold they are best on their own.

WHISKY (OR BOURBON) BAKED SWEET POTATOES (OR YAMS)

Whisky (Or Bourbon) Baked Sweet Potatoes (Or Yams) image

This recipe is a combination of my Dad's Candied Yam recipe and one from Gourmet. I prefer the darker sweet potato (which he called a yam) over the lighter yellow sweet potato. I like to use McClelland's Highland Scotch Whisky, but you can use any whisky/whiskey/bourbon you prefer; a friend told me she even made them with rum. I've also had good luck with making them in advance; arranging them in the dish, adding the syrup, and refrigerating them until it's time to bake them. This dish smells so good while baking: like cinnamon rolls, or the steam from a hot-buttered rum. And they taste almost like a dessert (I think they end up with a firm, custard-like consistency). At my family & friends' request, I now have to make them for every Thanksgiving and holiday meal.

BAKED YAMS WITH SAFFRON AIOLI

Baked Yams With Saffron Aioli image

Provided by Food Network Kitchen

Categories     side-dish

Time 1h10m

Yield 6 servings

Number Of Ingredients 9

6 garnet yams or other sweet potatoes (about 8 ounces each)
3/4 cup extra-virgin olive oil
1/2 cup grapeseed oil or vegetable oil
2 whole cloves garlic, plus 1/2 small clove, finely grated
Pinch of saffron threads, crushed
Kosher salt
2 large egg yolks, at room temperature
Juice of 1/2 lemon
Chopped fresh parsley, for topping (optional)

Steps:

  • Preheat the oven to 400 degrees F. Prick each yam with a fork in a few spots and arrange on a baking sheet. Bake until soft, about 45 minutes.
  • Meanwhile, heat the olive oil, grapeseed oil, whole garlic cloves and saffron in a small saucepan over medium-low heat until the garlic is soft, about 15 minutes. Remove from the heat and let cool completely. Remove the cooked garlic with a slotted spoon and transfer to a cutting board (reserve the infused oil). Using the flat side of a chef's knife, mash the garlic with a pinch of salt until smooth; set aside.
  • Make the aioli: Put the egg yolks, lemon juice, 1 tablespoon water and 1/2 teaspoon salt in a medium heatproof bowl. Bring a few inches of water to a bare simmer in a medium saucepan, then turn off the heat. Set the bowl with the egg yolks over the saucepan (do not let the bowl touch the water); whisk just until the egg mixture thickens slightly, 30 seconds to 1 minute, then remove the bowl from the saucepan. Using a hand mixer or a whisk, gradually beat in the saffron-infused oil in a slow, steady stream until the aioli is thick and creamy. (If it gets too thick, beat in 1 to 2 teaspoons water.) Mix in the mashed cooked garlic, grated fresh garlic and 1/4 teaspoon salt. Cover and refrigerate.
  • Remove the yams from the oven and let cool slightly. Split open and fluff the insides with a fork. Thin the aioli with water, if desired, and spoon onto the yams. Sprinkle with parsley.

KITTENCAL'S LAYERED BAKED CANDIED YAMS

Kittencal's Layered Baked Candied Yams image

This is a very simple recipe for candied yams but big on flavor, it's a must served along side of a Thanksgiving turkey or ham dinner ---the yams must be prebaked in oven *only* not boiled and just until fork tender do not bake until very soft and this may be done up to a day ahead --- this may be doubled and baked in a 13 x 9-inch baking pan, prep time does not include prebaking the yams --- no pumpkin pie spice? just mix together 1/2 teaspoon cinnamon with 1/4 teaspoon *each* nutmeg and allspice and use in place of the pumpkin pie spice :)

Nutrition Facts : Calories 564.4, Fat 21.7, SaturatedFat 8.2, Cholesterol 30.5, Sodium 127.3, Carbohydrate 91.4, Fiber 10.2, Sugar 28.4, Protein 4.8

Tips:

  • Selecting the right yams: Choose firm, unblemished yams with smooth, brown skin. Avoid any that are soft, have cuts, or show signs of sprouting.
  • Properly scrubbing and piercing: Before baking, thoroughly scrub the yams under running water to remove any dirt or debris. Then, pierce the yams all over with a fork to help them cook evenly and prevent them from bursting.
  • Choosing the right baking method: Depending on your preference and the desired texture, you can bake yams wrapped in foil or uncovered. Wrapping in foil creates a moist environment, resulting in tender, fall-apart yams, while baking uncovered gives a slightly crispy exterior and a fluffy interior.
  • Optimizing baking time: The baking time for yams can vary depending on their size and the desired level of doneness. Generally, larger yams may take up to an hour or more to bake, while smaller ones might be ready in around 45 minutes. To ensure even cooking, rotate the yams halfway through the baking process.
  • Checking for doneness: To determine if the yams are done, insert a fork or a toothpick into the center of the yam. If it goes in smoothly, the yam is cooked. Alternatively, you can check if the skin of the yam has become slightly wrinkled and the flesh has pulled away from the sides, indicating that it's ready to come out of the oven.

Conclusion:

Baked yams are a versatile and delicious addition to any meal. With their naturally sweet flavor and tender texture, they can be enjoyed on their own or incorporated into various dishes. Whether you prefer them simple with butter and salt or dressed up with herbs and spices, baked yams offer a satisfying and nutritious side dish or a delightful vegetarian main course. So, gather your ingredients, preheat your oven, and embark on a culinary journey to create perfectly baked yams that will tantalize your taste buds and leave you craving more. Happy baking!
