Salt and pepper (to taste)
¼ cup olive oil
2 tablespoons apple cider vinegar (or other vinegar of choice)
2 tablespoons Dijon mustard
2 teaspoons honey
1/8 teaspoon salt and a dash of pepper
¼ cup chopped fresh chives or green onions
1/3 cup chopped (cooked bacon (divided) (about 1 ounce or 7 slices)*)
1 ½ cups shredded cheddar cheese

4 slices peppered bacon
4 (5 ounce) skinless, boneless chicken breast halves
½ cup shredded Parmesan cheese, divided

1/2 small yellow onion, minced
2 cloves garlic, minced
6 ounces cream cheese, at room temperature
2 tablespoons finely chopped chives
1 1/2 teaspoons Worcestershire sauce

Four 6- to 8-ounce boneless skinless chicken breasts
12 slices bacon (not thick-cut)
